Making authentic fried rice with simple spices.I call this authentic because I only use spices like fried rice from the past,when there weren't many ingredients,including this fried rice.Using only a few ingredients,without soy sauce or other seasonings,this fried rice delivers a delicious,authentic flavor,and definitely reminds me of my favorite childhood dish.
I usually had fried rice like this for breakfast,but this time I added stink beans I always had authentic fried rice.This time, I added stinky beans because I happened to have a large supply of stinky beans.
Although stinky beans have a strong aroma,we usually cook them with them to create a delicious dish with their distinctive stinky aroma. However,you don't need to worry, the stinky beans won't change or diminish the authentic flavor of the fried rice I made.
Fried Rice Ingredients
130 grams of white rice mixed with corn rice
4 stinky beans (each stinky bean cut in half)
1 stalk of spring onion
15 grams of dried anchovies
Ground spices:
1 clove of garlic
1 shallot
4 cayenne peppers
1/4 piece of shrimp paste
1/2 tsp salt
1/2 tsp MSG
How to make
• Prepare all the ingredients for the fried rice.
• Grind the shallots, garlic, shrimp paste,and chilies until smooth using a mortar and pestle (a traditional pestle and mortar).
• Fry the washed dried anchovies until golden brown,then set aside.
• Sauté the ground spices until fragrant,using a little of the oil used for frying the anchovies.
• Prepare the rice to be fried,add it to the spice mixture,stir well,then add the anchovies,spring onions and stinky beans.
• Cook until the fried rice is cooked through and ready to serve.
I used white rice cooked with a mixture of corn and rice so the fried rices color looks appealing,like using soy sauce. I made this fried rice recipe for only two servings for me and my husband.
The fried rice is delicious, savory and spicy with the distinctive aroma of stinky beans and the slightly salty taste of the dried anchovies making this fried rice truly special.
