I had the idea to make some potato pancakes with oats and use shredded chicken as the filling. It’s a simple but unique recipe to break out of the routine and enjoy a gluten-free meal, because these pancakes turned out very light and flexible—perfect for stuffing. I made the shredded chicken using two chicken breast fillets, the leanest part of the bird. I added some seasonings and garlic—just a little salt, pepper, and paprika. I hope you like the recipe.
Ingredients
- 150 grams of chicken breast fillet
- 370 grams of potatoes
- 1 cup of milk
- 120 grams of oat flour
- 80 grams of finely chopped seasonings (bell pepper, sweet chili pepper, leek, and chives)
- 1 clove of garlic
- 1 teaspoon of paprika
- 6 tablespoons of olive oil
- Salt and pepper to taste


Preparation
1.- Season the chicken breast fillets with salt to taste and poach them in a little water. Once they're done, turn off the heat and let them cool to room temperature.

2.- Shred the chicken, add the seasonings, paprika, and pepper to taste. Next, add the minced garlic and cook until the seasonings have softened. Adjust the salt to taste. Turn off the heat. Set aside.



3.- We prepare the pancakes. We peel the potatoes, wash them, and cut them into small pieces so we don't overwork the blender.




4.- Add the chopped potatoes to the blender, along with the milk, salt, and pepper to taste. Blend until the mixture is smooth.


5.-. Pour the mixture into a bowl and add the oat flour to thicken it. Mix well. Adjust the salt to taste if necessary, and mix again.


6.-. In a skillet over medium-low heat, add a teaspoon of olive oil and pour in a portion of the potato and oatmeal mixture. Cook for 2 minutes on each side. For each portion of the mixture, add a teaspoon of olive oil.



7.-. We filled the pancakes with shredded chicken, and I added other ingredients to make them even more delicious: avocado and Guayanese cheese.
