I’ve made pancakes with apples, bananas, and also with carrots and oats. For this contest, I decided to use the traditional ingredients; I couldn’t add baking soda because I spilled it. The idea behind adding baking soda was to make the pancakes really fluffy. They did turn out fluffy, but not quite enough—not the way I wanted them. The recipe I’m sharing with you is traditional; the only change I made was sprinkling chocolate chips on top. I didn’t have any syrup or honey—my brother took what I had. Despite that, the pancakes turned out soft and delicious. I hope you like the recipe.
Ingredients
- 1 1/2 cups self-rising flour
- 1 teaspoon baking powder
- Sugar to taste
- Soybean oil, as needed
- 1 1/2 cups whole milk
- 1 egg, separated
- 1 teaspoon vanilla extract
- 1 teaspoon of ground cinnamon
- Chocolate sprinkles to taste


Preparation
1.- In a bowl, add the wheat flour, egg yolk, and milk. Mix well until the ingredients are fully incorporated.


2.- Add the baking powder, sugar to taste, vanilla, and cinnamon, then mix thoroughly again.

3.- Beat the egg white until stiff peaks form, then immediately fold it into the pancake batter.



4.-. Using a folding motion, gently fold the egg whites into the pancake batter until the mixture is smooth.

5.-. Add chocolate chips to taste and mix. Grease a skillet with oil and spoon in portions of the batter. Cook until golden brown on both sides, then transfer the pancakes to paper towels. Repeat until all the batter is used up.

Serve the pancakes and sprinkle them with chocolate chips and ground cinnamon.
