Cannelloni stuffed with chicken and shrimp [ENG-ESP]

Greetings, dear friends at @foodiesbeehive, welcome to my blog. Last weekend, I decided to break out of my routine and prepare something different: cannelloni. My mother, may she rest in peace, used to make cannelloni, but with egg pasta and ground beef filling. It's good to innovate, so I came up with the idea of combining chicken fillet with shrimp and using it as a filling for the spinach cannelloni I bought and used in a recipe I made months ago, but filled with broccoli.



Combining two intense flavors results in an even more delicious stew with more intense but pleasant flavors. I added very small cubes of potato and carrot to prevent the cannelloni from breaking, although it is quite difficult. There was no béchamel sauce, but there was a tomato and mozzarella cheese paste. I hope you like the recipe.

Ingredients


- 5 spinach cannelloni
- 185 grams of chicken fillet
- 55 grams of cleaned shrimp
- 60 grams of carrots
- 90 grams of potatoes
- 2 sweet peppers
- 11 g leek
- 7 g chives
- 20 g red bell pepper
- 1 clove of garlic
- 4 slices of mozzarella cheese
- 2 tablespoons of tomato paste for pizza
- 1 teaspoon of dried oregano
- 1 teaspoon of paprika
-1 teaspoon cumin
- Salt to taste
-2 teaspoons olive oil




Preparation


1.-. Heat water with a teaspoon of salt in a pot. When it comes to a boil, add the cannelloni and cook until al dente. Once ready, remove from heat. Set aside.


2.-. Cut the shrimp and chicken fillet into very small pieces.





3.-. Season the chicken pieces and shrimp with salt. Set aside.


4.-. Wash the red pepper, chili peppers, scallions, and garlic, then chop them into small pieces. Remove the skin from the garlic and chop it. Place all the seasoning in a pot.




5.- Peel the carrots and potatoes, wash them, cut them into very small cubes, and add them to the pot along with the seasonings.



6.- Add the chicken, shrimp, and spices (oregano, cumin, and paprika) to the pot. Mix together.



7.- Let it cook for a couple of minutes, then add the olive oil and adjust the salt. Let it cook for about 5 more minutes with the pot covered.


8.- Prepare the ingredients to begin filling the cannelloni. First, spread tomato sauce on the bottom of the baking dish, followed by two slices of mozzarella cheese. Next, carefully fill the cannelloni and place them one by one in the baking dish. To finish, spoon 2 tablespoons of tomato sauce over the cannelloni and top with two slices of mozzarella cheese. Place the tray in the microwave for 1 minute or until the mozzarella cheese melts (depending on the power of the microwave).






We serve this delicious cannelloni dish.

Saludos estimados amigos de @foodiesbeehive, bienvenidos a mi blog. Preparar algo distinto como unos canelones para salir de la rutina fue mi receta del fin de semana pasado. Mi madre que en paz descanse, solía preparar canelones, pero de pasta de huevo y rellenos de carne molida. Es bueno innovar, por eso se me ocurrió combinar filet de pollo con camarones y usarlo de relleno para los canelones de espinaca que compré y con los cuales hice una receta hace meses pero rellenos de brócoli.



Combinar dos sabores intensos da como resultado un guiso aún más delicioso y con sabores más intensos, pero agradables. Les agregué papa y zanahoria en cubos muy pequeñitos para evitar que se rompan los canelones, aunque es bastante difícil. No hubo crema bechamel, pero si una pasta de tomate y queso mozzarella. Espero les guste la receta.

Ingredientes


- 5 canelones de espinaca
- 185 grs de filete de pollo
- 55 grs de camarones limpios
- 60 grs de zanahoria
- 90 grs de papa
- 2 ajíes dulces
- 11 grs de ajo porro
- 7 grs de cebollín
- 20 grs de pimiento rojo
- 1 diente de ajo
- 4 lajas de queso mozzarella
- 4 cucharadas de pasta de tomate para pizza
- 1 cucharadita de orégano seco
- 1 cucharadita de paprika
- 1 cucharadita de comino
- Sal al gusto
- 2 cucharaditas de aceite de oliva




Preparación


1.-. En una olla ponemos a calentar agua con una cucharadita de sal. Cuando rompa el hervor, agregamos los canelones y los dejamos cocinar al dente. Una vez listos, los retiramos del fuego. Reservamos.


2.-. Cortamos en trozos muy pequeños los camarones y el filete de pollo.





3.-. Condimentamos con la sal los trozos de pollo y camarones. Reservamos.


4.-. Lavamos el pimiento rojo, los ajíes, el cebollín y el ajo porro para enseguida cortarlos en trocitos pequeños. También retiramos la piel del ajo y lo cortamos. Colocamos todo el aliño en una olla.




5.- Retiramos piel de la zanahoria y la papa, las lavamos, las cortamos en cubos muy pequeños y los vertemos en la olla junto a los aliños.



6.- Agregamos a la olla el pollo, los camarones y las especies, orégano, comino y paprika. Mezclamos.


7.- Dejamos cocinar un par de minutos, luego, añadimos el aceite de oliva y rectificamos el punto de sal. Dejamos cocinar unos 5 minutos más con la olla tapada.


8.- Preparamos los ingredientes para comenzar a rellenar los canelones. Primero, colocamos pasta de tomate en la base de la bandeja, seguido de dos lajas de queso mozzarella. Luego, rellenamos con cuidado los canelones y los vamos colocando uno a uno en la bandeja. Para culminar, colocamos 2 cucharadas de pasta de tomate por encima de los canelones y dos lajas de queso mozzarela. Colocamos la bandeja en el horno microondas por 1 minuto o hasta que se derrita el queso mozzarella (dependerá de la potencia del horno microondas).






Servimos esta delicia de canelones.

The cannelloni looks good here in Italy we usually don't mix meat and shrimp for the filling and rarely use chicken for cannelloni but I'll be curious to try your version ❤️❤️

It's the traditional recipe, with ground beef, which I love. But I wanted to try something different. They turned out really delicious. Best regards.
