Good evening to all my hive friends. Today, I prepared a new recipe using eggs, and I’m excited to share it with you. An egg curry is one of those dishes that beautifully combines simplicity with rich flavor. In Sri Lankan households, it is often prepared as a quick yet hearty meal, where the eggs are simmered in a fragrant blend of carrots, leeks, onions, spices, and coconut milk.

This dish not only delights the taste buds but also provides a healthy source of protein, vitamins, and beneficial fats, making it a nutritious choice for the whole family. Whether served with rice, bread, or string hoppers, egg curry remains a versatile favorite that perfectly suits both everyday meals and special occasions.

Required Ingredients...

🍀 1 1/2 Cup of Coconut milk.
🍀 3 Egg.
🍀 1 Onion.
🍀 Curry leaves.
🍀 2 green chili pods
🍀 A medium sized carrot.
🍀 A piece of leek.
🍀 1/3 Teaspoon of turmeric powder.
🍀 1 Teaspoon of Meat curry powder.
🍀 1 Teaspoon of curry powder.
🍀 1 teaspoon of chili powder.
🍀 1 teaspoon of pepper powder.
🍀 1/2 Teaspoon of fenugreek seed.
🍀 Salt as needed
🍀 1 Tomato
🍀 1 Tablespoon of coconut oil.

Method of making....

First, let’s finely chop the onion, carrot, leeks, green chili, garlic, and tomato.

Next, take a bowl and add the eggs, chopped carrot, leeks, green chili, and onion.

Next, add a little black pepper powder, chili powder, salt, and turmeric powder, then mix well.

Now we need to steam the mixture. For that, take a suitable container, pour the mixture into it, and steam until cooked. Then cut it into small cube shapes as shown below.

Now place a pan on the stove and add about one tablespoon of coconut oil. Once heated, add onions, garlic, curry leaves, green chilies, and tomatoes, followed by chili powder, curry powder, turmeric powder, meat curry powder, and a little salt. Then add some coconut milk and cook for about 4 minutes.

Now add the steamed egg pieces to it and cook for about 2 minutes, then remove from the stove.
