Hello, friends, food lovers, and community! Today, I am sharing a simple recipe that I prepared during our vacation in India. It's not fancy; it's very easy to make and uses only available ingredients.
During our stay in India, we mostly prepared vegan food. However, at times we felt the need for a non-vegetarian diet to balance our energy. We occasionally included eggs or fish when we had non-religious activities.
ingredients:
2 peeled potatoes
2 green chilies
1 green paprika
4 spring onions
2 tbsp chopped coriander
3 carrots
1/2 cabbage
4 eggs
1tsp salt
1 tsp black pepper
2 tbsp oil
Finely chopped cabbage.

In a hot skillet, I poured 1 tbsp of oil
And added cabbage and spring onion.
Then, chopped green paprika and chilies and cooked them on low heat.
Meanwhile, while grated potatoes
Added to the cabbage and paprika mixture, and stirred just for 1 minute.
Grated carrots
Added to the mixture and stirred well.
in a bowl broke 4 eggs.
Beaten eggs with salt and pepper.
Added chopped coriander. kept aside.
In a greased baking tray, transferred the vegetable mixture.
Spread it evenly.
poured beaten egg over the vegetables.
Baked in a preheated oven at 180 C for about 7-8 minutes.
After 8 minutes removed tray and sprinkled some chees over the vegetable eggs.
and vegetable omelet is ready for breakfast, It was good delicious and easy.
