Making starter from scratch is fun. I did that some weeks ago too as I wanted a real, nice smelling bread. And to challenge myself more I did two different starters to see how they behave and which one I like more. One with plain white flour and one with wholegrain rye flour. And the second is so much nicer! The 1:1:1 ratio is perfect for it, which makes it easy and it smells nice. The white one was very runny and I had to double the flour each time... which made me looooots starter and looooots of discard that I had to fin a way to use up (more bread, waffles, crackers, pancakes).
