
Hace cinco días que empecé una dieta de desintoxicación de alimentos procesados, azúcar, harina de trigo, harina de maíz, lácteos y pare usted de contar. He decidido alimentarme así por 21 días para depurar mi sistema de toxinas.
Estaba notando que últimamente, en momentos de ansiedad, me estaba refugiando demasiado en las harinas y azúcares para drenar, entonces sentí que era necesario parar por unos cuantos días para mejorar mi relación con la comida y evitar atiborrarme de estos alimentos.
Uno de los retos que me había planteado era poder preparar postres sin hacer pruebas durante la preparación y, obviamente, sin comerlos una vez hechos.
Five days ago, I started a detox diet to cut out processed foods, sugar, wheat flour, corn flour, dairy products, and the list goes on. I’ve decided to eat this way for 21 days to cleanse my system of toxins.
I’d been noticing that lately, in moments of anxiety, I was turning too much to flour and sugar for comfort, so I felt it was necessary to take a break for a few days to improve my relationship with food and avoid bingeing on these items.
One of the challenges I’d set for myself was to be able to make desserts without tasting them as I went along—and, obviously, without eating them once they were done.

Hablando con mi mamá, me comentó sus ganas de comer helado y entonces decidí prepararlo en casa aunque me resultase difícil no probarlo.
While talking with my mom, she mentioned how much she wanted some ice cream, so I decided to make some at home, even though it would be hard for me not to try it.

Lo primero que hice fue colocar la crema de leche y la leche condensada en el refrigerador hasta que se enfriaron, y ya mentalizada con no poder probar, tomé 360 gramos de crema de leche y la llevé al bol de la batidora junto a 160 gramos de leche condensada y la vainilla y batí por unos minutos hasta que integró muy bien.
Dividí la mezcla en dos envases; a la base de mantecado le agregué salsa de caramelo casera; la tenía guardada en la nevera; es muy útil para todo tipo de postres. Esta versión será para mi mamá, ya que ella no puede comer chocolate.
The first thing I did was put the heavy cream and condensed milk in the refrigerator until they were cold, and—having already resolved not to taste it—I took 360 grams of heavy cream and added it to the mixer bowl along with 160 grams of condensed milk and the vanilla, and I beat it for a few minutes until it was well combined.
I divided the mixture into two containers; to the buttercream base, I added homemade caramel sauce—I had it stored in the fridge; it’s very useful for all kinds of desserts. This version is for my mom, since she can’t eat chocolate.


También hice una versión achocolatada agregando una cucharada de cacao (cernido), agregué chocolate derretido y salsa de caramelo.
I also made a chocolate version by adding a tablespoon of cocoa powder (sifted), along with melted chocolate and caramel sauce.


Los llevé al refrigerador durante toda la noche. Hoy mi mamá lo probó junto a un puñado de merey que sumé para brindar un toque crujiente. Ella me dijo que quedó muy rico, así que logré hacer un postre sin probarlo.
I put them in the fridge overnight. Today my mom tried some along with a handful of cashews that I added to give it a crunchy touch. She told me it was really delicious, so I managed to make a dessert without even tasting it.
