En ocasiones sientes el corazón arrugado; suceden acontecimientos que te envuelven, pero que no han sucedido porque hayas hecho algo para que así sea. Llegan entonces la zozobra y mientras algunos celebran, tú con la mente fría analizas y ves a tu alrededor sin poder vislumbrar una mejora a corto plazo.

En esos momentos, en los que la vida parece pesar, no hay nada mejor que hacer algo que te gusta para darle calma a tu mente y encontrar paz en esa actividad. La cocina es una de esas pasiones y es también una vía de escape para olvidar por ratos la realidad. Hoy les quiero compartir un pastel de papas, una de esas comidas que pueden abrazar el alma y hacer olvidar la tristeza; dicen que barriguita llena, corazón contento, y así sucede. Los buenos sabores también nos ayudan a calmarnos y a encontrar la paz. ¡Comida para el alma!

Sometimes you feel your heart sinking; events happen that envelop you, but they haven't happened because you did something to make them happen. Then anxiety sets in, and while some celebrate, you analyze the situation with a cool head and look around you without being able to see any improvement in the short term.

In those moments, when life seems heavy, there is nothing better than doing something you enjoy to calm your mind and find peace in that activity. Cooking is one of those passions and is also an escape to forget reality for a while. Today I want to share with you a potato cake, one of those foods that can embrace the soul and make you forget your sadness; they say that a full belly makes for a happy heart, and that's how it is. Good flavors also help us calm down and find peace. Food for the soul!


Ingredientes (Ingredients)


  • 5 papas.
  • 40 g de tocino.
  • 1 cebolla.
  • 40 ml de leche (hecha con el agua de papa).
  • 40 ml de agua de papa.
  • 3 muslos de pollo sin hueso.
  • 5 cucharaditas de queso parmesano.
  • 5 potatoes.
  • 40 g bacon.
  • 1 onion.
  • 40 ml milk (made with potato water).
  • 40 ml potato water.
  • 3 boneless chicken thighs.
  • 5 teaspoons Parmesan cheese.

Preparación (How to make it)


  • Para esta receta empecé a mezclar sabores que me parecieron que podían combinar bien. Sancoché las papas sin concha y en pequeños trozos; así están listas más rápidamente. Luego las paso por un pisapuré, le agrego la leche y el agua de la cocción de la papa hasta integrar.

For this recipe, I started mixing flavors that I thought would go well together. I parboiled the peeled potatoes in small pieces so they would cook faster. Then I mashed them, added milk and the water used to cook the potatoes, and mixed until smooth.

  • Sofrío el tocino hasta que esté bien dorado y lo incorporo al puré de papas.

I fry the bacon until it is golden brown and add it to the mashed potatoes.

  • Corto las cebollas en julianas y sofrío en la grasa del tocino hasta que se caramelicen.

I julienne the onions and sauté them in the bacon fat until they caramelize.

  • Saco la carne de los muslos y la sofrío con ajo, paprika y sal en la grasa del tocino. Puedes usar las especies que más te gusten. Voy creando las capas del pastel de papa: puré, pollo y termino con una capa de puré, la cebolla caramelizada y el queso parmesano.

I remove the meat from the thighs and fry it with garlic, paprika, and salt in the bacon fat. You can use whatever spices you like best. I create the layers of the potato pie: mashed potatoes, chicken, and I finish with a layer of mashed potatoes, caramelized onions, and Parmesan cheese.

  • Llevo al horno precalentado a 170 grados centígrados durante veinte minutos.

Bake in a preheated oven at 170 degrees Celsius for twenty minutes.

Occasionally, I have noticed that my body doesn't want sugar (which is weird as it's kind of an addictive thing), but I would like to have some snack... In those moments, this potato cake would be a perfect fit! My mom used to prepare something similar, but without meat inside, and it was a delicious snack, and sometimes even a great dinner!
