Bosragh or Khajoor - A traditional dish of Balochistan and KPK.

Hello! Hope you all are fine. Today I want share a traditional recipe of Balochistan and KPK often served as snack with morning and evening tea.


Ingredients

2 cups flour (maida)
½ cup semolina (sooji)
½ cup sugar
1 cup milk (lukewarm)
1 egg (optional, for softness)
2 tbsp ghee or butter
1 tsp baking powder
1 pinch salt
Oil for frying


Method

1. Prepare the Dough

Mix the dry ingredients flour, semolina, sugar, baking powder, and salt.
Add ghee and rub it into the flour. Dont mix them all together but little by little.
Add egg (if using and is optional
Gradually add milk and knead into a soft dough.
Cover and rest for 30–60 minutes to rise.

2. Shape the Bosragh

Take small portions of dough.
Roll into oval shapes.
Press them gently on a grater, textured mold, or fork to create the traditional pattern seen in your photos. You can also use a strainer with pattern to create such patterns.

3. Fry

Heat oil or ghee on medium-low heat.
Fry slowly one by one until deep golden brown.
Turn frequently for even color.
Remove and drain on paper towels to absorb excessive oil.

Bosragh, tuned out well balanced in taste and crispy i is a traditional homemade sweet that brings back memories of family gatherings and festive occasions. Made from a simple dough of flour, semolina, milk, and sugar, each piece was carefully shaped with a beautiful textured pattern before being fried until perfectly golden brown. The crispy exterior and soft interior create a delightful contrast, making this classic treat irresistible with a cup of tea.In north it is often called khajoor.
