Where are you, my fellow food lovers? We haven't seen each other for a while and that's only my fault!
Well, I need to be honest, I've been secretly following you from the corner, liking your posts and enjoying all those amazing recipes and photos that look so real you could almost eat from the screen. That's how I feed my eyes until I finally force myself to make something for my own stomach, hihi. 🤭
What I am about to share with you today is a real classic; simple, quick, tasty, no recipe or exact measurements.
Whatever you like → works!
Whatever you have in the fridge → wOrKs!
With eggs → WoRkS!
No eggs? Still WORKS!
Basically, it's just sautéed veggies that you mix with eggs, or not... just fry them a bit more and add a spoon or two of sour cream or neutral cream, and voilà!
Pardpn me, I am drifting too far from the "recipe" (if I can even call my rambling that way) - here's what I threw together for a super quick dinner:
First, I fried a bit of finely chopped homemade smoked bacon on a dry pan, then added a drizzle of olive oil, some green pepper, some orange pepper (the more colors the better… PAPRIKA rules!). After, I added a small amount of chopped onion, two or three cloves of garlic and about 1/3 of one big juicy pink tomato fresh from our garden (well, not fresh, it is picked up like a month ago as mostly green but now is perfect).
Of course I salted it to taste (it is most important to be delicious to us who are preparing meal, right?) and let it simmer a bit on medium heat so all the flavors could blend perfectly.


Then I whisked six eggs in a bowl (yes, six and no, it wasn't all for me... my mom, my dad and I had dinner together 🥰) until they got foamy and full of tiny bubbles, then turned up the heat a bit and poured them all over the veggies. Then I did some quick stir-stir-stir aaaand done! Simple as that.



If you prefer, you can also fry the eggs whole over the veggies; I sometimes do that too... or just break them in and stir gently so you get some white parts, some yolk and some mixed, or make it like I did this time, basically an upgraded scrambled eggs.
And there you go! Nothing fancy but delicious, quick to make, even quicker to eat and leaves almost no dirty dishes or kitchen mess behind. 🤗

I am sure you make something like this too. Anyone who loves eggs usually loves them in 101 ways… so this is probably nothing new to you!
Since I don't usually eat bread, I often try to avoid it, I have already got used to eating everything without it. But yogurt, yogurt goes perfectly with this one! One cup, two, three... depends how small they are. Hot mix straight from the pan and cold yogurt, nothing can beat that friendship.
Of course, cheese, sourcream and kajmak go great with it too. Basicaly anything dairy works well, if you like that kind of thing. If not, if you are alergic to lactosw or something, a simple fresh salad is also a great match.
