High Protein Pancakes

One thing I always do at the start of the week is check on "wity" to see if she's doing well. If you don't know what wity is, I'll explain a little. She's a large living creature, a microbe that I grow in this small container. She lives and will continue to live, as something I love, and will produce something from flour.

This is a natural yeast commonly called sourdough. Every time I want to make something from flour, I use it, and it's incredibly beneficial in making food. Even foods that need leavening, wity helps it rise, like bread.

However, this time I really want to make something. I prefer want to make bread, but I discard it cause I left it at room temperature for too long. So, what I going to make? Pancakes, of course, but I want to make them higher in protein.

I make chocolate pancakes. I happen to have pea protein with a really delicious chocolate flavor. I make them slowly, but I only a vague recipe, so I just went with my gut feeling.

  • 170 grams of flour
  • 170 ml of water
  • 30 grams of sourdough starter
  • 1 egg
  • 40 grams of pea protein
  • Pinch of salt
  • 20 grams of butter
  • Honey and fruit (I used muscat grapes)

Last night, I used 170 grams of flour, water, and sourdough starter, and let it sit for 13 hours. I used all of it, and I used the egg and pea protein to mix it together. It was a bit tiring because the texture of the sourdough is stickier than usual.

After that, I added butter and salt, and a little stevia for sweetness. But, it's not really necessary because I'll be topping it with honey later.

I baked it in a pan over low heat. Then, let both sides cook until fully cooked. Remove and serve on a plate.

I like to use honey and a little fruit for sweetness. It feels like eat pancakes at a restaurant. This makes my breakfast perfect. Healthy and filling, with a sweet, satisfying bite.

Oeee this is a nice one as well.. I have just recently started on a sourdough journey and my starter is very much alive so also thinking about what to make with all of this. I have looked a lot on the discard recipes but pancakes also seems like a good one for this. cool!
