My sister and I went to the market to buy ingredients for this evening's dinner. it's been a while since we had yam porridge, so we brought yam and the necessary ingredients.
Yam porridge or Asaro is a delicious Nigeria yam dish cooked in a well- seasoned broth until the yam becomes soft. It often uses common ingredients, making it one of the easiest and most affordable foods in Nigeria. The dish's distinctive unrefined palm oil gives the porridge a reddish color. However, everyone has their own way of cooking yam porridge, with different preference.
INGREDIENTS:
* Ponmo(cowskin)
* Ukpaka(African oil bean seed)
* Crayfish
* Onions
* Seasoning cubes (Terra)
* Vegetable
* Sokoto pepper
* Palm oil
* Yam
* Salt
METHOD:
* To prepare the yam, I peel the yam and wash the yam, cut it into chucks about 2 inches. Wash the cubes of yam and place them into the pot.
* Place the pot on fire and add enough water to cover the yam pieces. Then, add
grounded crayfish, diced onions, sokoto pepper, seasoning cubes (Terra) salt.
* Cook until the yam cubes are soft and tender. Once the yam is soft, add palm oil, ponmo (cowskin) and Ukpaka (African oil bean seed), stir gently to combine. Allow it to boil for a minute.
* Wash and chop the vegetables, then add them to the pot and stir gently before removing from heat. (Note: Don't leave the pot on fire for too long, the residual heat from the yam will cook the vegetables without overcooking them). This helps perserve the veggies nutrients and color.
Simple and delicious yam porridge is ready.
