Hello Hiveans! The honey theme is back in Qurator's HIVE Top Chef and this week I would like to introduce one of my favorite cakes, Steamed Honey Fruit Cake. Those who like sweet tastes, need to change the recipe to your sweetness liking. This cake is a perfect cake for me, by using honey the cake is less sweet. Cooking this cake needs time and I really mean it, it took 3-hours to bake this cake to perfection. After 3 hours steamed and a lot of walking back and forth from the living room to the kitchen to refill the water. But it's all worth it, after baking I sent half the cake to my friend Niny's house and she and her mom complimented my cake and really enjoyed it so during this tough time which I am so pleased to listen. I believe that we can continue sharing love through our cooking experience. So let's start baking friends!
Ainie Kashif with her favorite Steamed Honey Fruit Cake

Ingredients
1/2 cup fine sugar
1 1/4 cup honey
250g butter
1 box fruit mix (soak in hot water for 5 minutes and drain)
3 eggs
1 teaspoon vanilla essence
1 teaspoon lemon essence
1/2 cup hot water

Methods
Sift Ingredients
3 1/2 cups flour
2 teaspoon baking powder
1 teaspoon of soda bicarbonate
1 teaspoon cream of tartar
1 teaspoon of cinnamon powder

2. 1 box fruit mix (soak in hot water for 5 minutes and drain).

3. Caramelize the sugar inside the pot until it becomes brown. Add 1/2 cup very hot water, mix well until all sugar dissolved. Add honey, mix well.

4. Add butter and stir until butter melts.

5. Add fruit mix and lemon essence, mix well.

6. Add the sifted flour, keep stirring and mix well for about 5 minutes. Remove from fire.

7. Beat eggs with the vanilla essence until fluffy.

8. Add the beaten egg into the dough and mix well.

9. Grease the baking tin. It's better if you have parchment paper to cover the base of the tin.

10. Pour the batter into the tin. Steamed for 3 hours.

11. The most crucial part to your success is to wrap the cover so that no water will drip on your cake.

12. My Favorite Steamed Honey Fruit Cake is ready. J

Just perfect not too dry and not too moist. So aromatic with that cinnamon smell, yummy!
