I was surprised to see that this jaggery factory was running in the indigenous way and sugarcane juice was being heated in big pots and big pots. Big pots were filled with sugarcane juice and a fire was burning under them. When I saw that the thing being used as wood for lighting the fire was sugarcane peels, those sugarcane peels from which the sugarcane juice had come out and these sugarcane peels were used as fuel. They were using it to make jaggery, so the sugarcane was also giving juice and was also being used as fuel. This way, the cost was also reduced. And then the jaggery made from fire was also excellent in taste and taste.

So this indigenous sugarcane factory was running in a completely indigenous way. On the one hand, the sugarcane was being cleaned and fed into a machine that made perfectly clean and transparent sugarcane juice. Then the juice that was coming out of this machine was going through a large pipe into large pots that were kept on fire. When a pot was full of sugarcane juice, the extraction of sugarcane juice was stopped so that the large pots that were already full of sugarcane juice could be used to make molasses. So, I want to tell you one more thing that the peels of the sugarcane that were being used as fuel, from which the juice had come out, were lying outside in the open field under the sun so that they could dry out from the heat of the sun, because you and I all know that sugarcane does not dry, but gets wet. And when the juice comes out of it, the sugarcane husks are placed outside in the open field under the sun so that it dries out. And when it dries, it will be burned as fuel. This jaggery is very rare and nowadays modern factories have been set up where jaggery is made, but the taste of this jaggery made in the indigenous way is completely unique and in some indigenous factories, chemicals are also added to the jaggery, but the owner of the factory where I am present says that they do not use chemicals at all to make jaggery, but this jaggery is made through pure sugarcane and the color of the jaggery is also completely pure. No food color is used in it, so jaggery is made in different flavors here. One of the most famous jaggery is sour and sweet jaggery. Sour and sweet jaggery is specially made for eating and these people eat it with great enthusiasm in both winter and summer. Apart from this, jaggery is also made sweet, that is, if you only want to eat sweet jaggery, then it will not be sour. The sour jaggery is specially prepared and in small quantities because sour and sweet jaggery are different. The sour jaggery is used in the summer season, but the sweet jaggery is used in both winter and summer seasons. And if you want to make syrup from it in the summer, the syrup that will cool your stomach in the summer should be made from sweet jaggery.


Apart from this, the juice of jaggery, which is prepared by heating, is also sold. You can see in some pictures that there are bottles lying there and you can also see a bottle in my hand. This bottle is filled with sugarcane juice. This sugarcane juice is very delicious and you can eat it with bread. If you eat it with double roti, it looks even more delicious. If you take the juice that is in this bottle, if you take it home and heat it for another five to ten minutes on a low flame and then you eat it with bread, it becomes even more delicious. Apart from this, the sugarcane juice that you see in the bottles is not the juice that comes out of the sugarcane juice directly, but it is the juice that is first heated in these big pots and when it thickens, the thick juice and the sugarcane juice are mixed in it and its color changes.
