🇪🇸 ~ Preparar hallacas para Navidad y Año nuevo significa reunirse en familia, desde que tengo memoria es así; no imagino cómo sería preparar esta receta uno solo, simplemente "hallaca" es sinónimo de muchos pasos, muchos ingredientes por limpiar, cortar, guisar, amasar, envolver y cocinar: No porque sea laborioso es que no me figuro cómo sería prepararlas sola, es porque tiene tantos pasos, que en sí mismo representa un ritual súper entrañable.
🇺🇸 ~ Preparing hallacas for Christmas and New Year's means getting together with the family. It's been that way for as long as I can remember. I can't imagine what it would be like to prepare this recipe alone. Simply put, “hallaca” is synonymous with many steps, many ingredients to clean, cut, cook, knead, wrap, and bake. It's not because it's laborious that I can't imagine what it would be like to prepare them alone, it's because there are so many steps that it represents a very endearing ritual in itself.
Por ejemplo es bastante comun que cada miembro de la familia tenga un "rol" asignado en la cadena de preparación, por ejemplo el que prepara las hojas de bijao, el que corta las verduras, el que prepara el guiso, y así. Cada etapa es importante porque de cada una depende que el plato quede bien; por ejemplo, una masa muy suave no retendrá bien el relleno, y si algún guiso no está en su punto de sal correcto, la masa y las hojas absorberán tanto la poca sal que tiene que al final la hallaca quedara desabrida.
For example, it is quite common for each member of the family to have an assigned “role” in the preparation chain, such as the person who prepares the bijao leaves, the person who cuts the vegetables, the person who prepares the stew, and so on. Each stage is important because the success of the dish depends on each one; for example, a very soft dough will not hold the filling well, and if a stew is not seasoned with the right amount of salt, the dough and leaves will absorb what little salt there is, and the hallaca will end up tasteless.

Mi tarea cada año en "la cadena de elaboración" es amarrar las hallacas, tambien ayudo en las demas estaciones si me lo piden pero mi tarea principal es esa, y curiosamente porque nadie más en la familia aprendió a hacer ese cruce de 3 vueltas de pabilo que hacía nuestra abuela materna (y es este nudo el que no permite que el agua de la cocción se filtre dentro de la hoja, o que al menos no lo haga demasiado) a quien debemos todo lo que sabemos sobre la preparación, las cantidades y sus tiempos correctos para no sobre cocinarse.
My task every year in the “production line” is to tie the hallacas. Durante la más reciente reunión familiar mi mamá contó la anécdota de cómo aprendí de pequeña a amarrar hallacas, mi abuelita me enseñó practicando con una panela de jabón azul 😂 🧼 y fue como viajar al pasado en 0.05 seg, ¡pero es cierto!, básicamente ese jabón es parecido aunque no igual en dimensiones a una hallaca, y recordé que efectivamente es bastante util practicar de esa manera hasta que aprendes a hacer por inercia o memoria muscular ese nudo.
During our most recent family gathering, my mom told the story of how I learned to tie hallacas as a child. My grandmother taught me by practicing with a bar of blue soap 😂 🧼 It was like traveling back in time in 0.05 seconds, but it's true! That soap is similar to a hallaca, although not exactly the same size, and I remembered that it's actually quite useful to practice that way until you learn to tie the knot by muscle memory or inertia.

En esta primera reunión elaboramos unas 25 hallacas aproximadamente, y todavía quedan muchas más pendientes por hacer (esto es lo que se conoce como la primera tanda, que es de prueba) pero como ya se había hecho de noche guardamos el guiso para una próxima ocasión.
Ese día estaba tan entretenida que tomé muy pocas fotos, todos los preparativos del guiso de las hallacas es visualmente bastante bonito y satisfactorio por todos sus colores, me gusta comparar el proceso de picar todo hasta el infinito con algún tipo de meditación, porque literal entras en trance.
Hoy me siento contenta y con espíritu festivo, esta Navidad tiene algo diferente, no se qué es pero es bastante lindo y por eso quería compartir las primeras fotos de las primeras hallacas de este año aquí 🎁 🎄
At this first meeting, we made approximately 25 hallacas, and there are still many more to make (this is what is known as the first batch, which is a trial run), but as it was already dark, we saved the stew for another occasion.
I was so entertained that day that I took very few photos. All the preparations for the hallacas stew are visually quite beautiful and satisfying because of all the colors. I like to compare the process of chopping everything endlessly to a kind of meditation, because you literally enter a trance.
Today I feel happy and in a festive mood. This Christmas has something different about it. I don't know what it is, but it's quite nice, and that's why I wanted to share the first photos of this year's first hallacas here 🎁 🎄
