Tasty Brinjal Recipe

Assalam-o-Alaikum bloggers! How are you all? I hope everyone is doing well. Alhamdulillah, we are also fine.

Today I am here with a new recipe, and it is Brinjal (Eggplant). Many people love brinjal, and it is also one of the favorite vegetables in our home. Whenever we feel like eating vegetables, we often cook brinjal. Everyone has their own way of making it, but the method I use is very tasty and simple. I hope you will try it and enjoy it with your family.

Ingredients

1 kg brinjal (eggplant)

4 medium tomatoes

2 large onions

4 green chilies

1 teaspoon turmeric powder

1 tablespoon red chili powder

Salt to taste

Cooking oil for frying

Method

First, wash all the brinjals properly. After washing, cut them into long slices. Then add a little salt and deep fry them until they become soft and lightly golden. Fry all the brinjal slices and keep them aside.

Now wash the tomatoes and cut them into small pieces. Put them in a blender and make a smooth paste. Heat some oil in a pan and add the tomato paste. Fry it well until the oil starts separating from the paste.

While the tomatoes are cooking, peel the onions and cut them into long slices. Fry the onions in a separate pan until they become slightly caramelized and light golden in color. Then add the green chilies and fry them for another minute. Remove them from the pan and keep them aside.

When the tomato paste is fully cooked, add the fried onions and green chilies. Now add salt, red chili powder, and turmeric powder. Mix everything well and cook for a few minutes so that the spices blend nicely with the tomatoes.

Next, add the fried brinjals to the masala mixture. Gently mix everything together so the brinjals are covered with the flavorful gravy. Cover the pan with a lid and let it cook on low heat for 5 to 10 minutes. This will help all the flavors combine perfectly.

Your delicious brinjal dish is now ready to serve.

In our home, we usually enjoy this recipe with plain yogurt. You can also serve it with raita. It tastes wonderful with fresh chapati, naan, or rice. The soft brinjals, flavorful tomatoes, caramelized onions, and green chilies make this dish very special and tasty.

Just the fried eggplant for me with soy sauce and calamansi/lime is already good, but this recipe made it more tasty for sure. Love that it has real tomato used in it and it blended and with lots of spices too. I think I can eat lots of this with rice. Looks yum!
