Potato Noodles with Gochujang Sauce

Hi bloggers and food lovers, today I tried making my own potato noodles. They have a chewy texture and a spicy, savory flavor. It turns out it’s quite tricky to make this is the second time I’ve tried it, and it finally I did it. Okay let's get started

Ingredients:

  • 400 grams of potatoes
  • a pinch of salt
  • 2 tbsp tapioca flour
  • 6 tbsp rice flour
  • 4 tbsp all-purpose flour
  • 1 tbsp gochujang paste
  • 1 tbsp chili flakes
  • cheese
  • 3 sausages
  • 2 tbsp fiber creme
  • 100 ml water
  • 1 clove garlic
  • cooking oil
  • 1/2 tsp garlic powder
  • 1/2 tsp sugar
  • 1/2 tbsp oyster sauce
  • 1/2 tsp salt

Instructions:

  • Peel the potatoes and rinse under running water

  • Cut the potatoes into smaller pieces

  • Boil the potatoes until soft

  • Mash the potatoes through a sieve

  • Add the all-purpose flour, tapioca flour, and rice flour

  • Mix the flours and mashed potatoes until they form a dough

  • Take a small portion of the dough and roll it out into long strands like noodles

  • Repeat until all the dough is used

  • Boil the potato noodles in boiling water mixed with a little oil

  • When the noodles start to float, remove them, drain, and set aside

  • Sauté the minced garlic

  • Add gochujang paste and chili flakes

  • Add a mixture of 2 tbsp fiber cream and 100 ml water to the pan

  • Add the sliced sausage to the pan

  • Add the cheese

  • Cook until boil

  • Stir until well combined, then add oyster sauce, garlic powder, salt, and sugar

  • Place the potato noodles on a plate, then pour the spicy gochujang sauce over the noodles

  • Sprinkle sesame seeds on top

  • The potato noodles with gochujang sauce are ready to eat
