
Hello everyone, I'm back in the kitchen again today. Lately, I've been enjoying cooking more often because of the weather and spending more time indoors. Today, I'll be making a Thai dish called Pad See Ew, a popular Thai stir-fried noodles dish that many Thais are familiar with. It's actually quite easy to make, but I have to say that I'll be adapting the ingredients. I can't find the exact same ingredients as in Thailand, but I can still make it taste just as delicious. Let's see what ingredients we have.

Ingredients
- Eight Vietnamese rice paper sheets (wide noodles)
- 100 grams of minced meat
- Three eggs
- One small carrot
- 100 grams of Chinese kale
- ½ tablespoon of dark soy sauce
- ½ tablespoon of light soy sauce
- ½ tablespoon of oyster sauce
- ½ teaspoon of seasoning powder
- ½ teaspoon of oil
- Three cloves of garlic

Instructions
- First, cut the rice paper sheets into strips about two to three centimeters long. - Soak the noodles in plain water for about 20 seconds, then drain and strain to remove excess water, leaving only the strands.




- Next, toss the noodles with oil to prevent them from sticking together. Then, add dark soy sauce for a richer, more flavorful sauce. (If using pre-packaged noodles, you can simply toss with oil or sauce directly.)




- Heat a pan over medium heat, add oil, followed by minced garlic. Sauté the garlic until fragrant, then add the meat (pork, chicken, or seafood). Stir-fry until the meat is cooked, then add the egg and stir-fry. Wait for the egg to set slightly so that it forms egg pieces when served.




- Season with soy sauce, oyster sauce, and seasoning powder. Stir well, then add the chopped kale and carrots and stir-fry everything together.




- Finally, add the prepared noodles and stir-fry until everything is well combined. Once the vegetables are cooked and the noodles have absorbed the seasonings, you can serve it.


- Add lime juice if you have any; if you're out of peanuts, you can add that too. Sprinkle with pepper for added aroma, depending on your preference. Personally, I add chili powder for spiciness in true Thai style.


Squeeze in some lime juice and mix it all together. That's it! You can enjoy this delicious main meal. The method is easy, and the ingredients can be adapted. Nothing is beyond our capabilities!
