Hello everyone, I'm back in the kitchen again today, and the menu I want to introduce is Nam Prik Ong. Nam Prik Ong is a Northern Thai dish, a famous dish that anyone who has traveled to the North will know. The main ingredient is meat, but most often it's pork. However, since I prefer beef, I used beef instead. The taste is good, but it depends on your preference for the type of meat. The method is not difficult. Let's look at the recipe and steps.

Ingredients
- 200 grams of minced meat
- Five to six small tomatoes
- Four to five dried chilies
- One shallot
- Five cloves of garlic
- One tablespoon of shrimp paste
- One teaspoon of seasoning powder
- 2 teaspoons of chili oil
- One tablespoon of vegetable oil
- Coriander and spring onions for garnish

Method
- Blend the dried chilies, shallot, and garlic. Normally, this would be pounded in a mortar, but for convenience and speed, I've blended them. Then add the shrimp paste and blend everything together. Once blended, heat the oil in a pan. Once the pan is hot, add the blended chili, garlic, and shallots and sauté until fragrant.

- When it starts to smell aromatic, add the prepared meat and stir-fry until cooked. Then add the tomatoes and stir-fry again. Season to taste, followed by chili oil for aroma, richness, and an appetizing color. Let the tomatoes simmer until they develop a sweet and sour flavor.

- Once the tomatoes are fully cooked, sprinkle with chopped scallions and cilantro.

It's ready to serve with rice and omelet – it's delicious! Or, if you have fresh vegetables, add them to enhance the flavor and make you want to eat more rice. This is a recipe for Nam Prik Ong, a Northern Thai chili paste.
