Hello sweets and cake lovers, today I'm sharing with you the decoration of a marbled cocoa cake for Mother's Day. I decorated it with frosting in a soft color for the moms in the house, including myself.

Hola amigos amantes de los dulces y pasteles, hoy les comparto la decoración de un pastel marmoleado con cacao para el día de las madres, lo decore con glaseado con un color suave para las mamis de la casa incluyendome.

🧁 Ingredients:

4 eggs. 140 grams of sugar. 1 tablespoon of shortbread essence. The juice of 1 lemon. Lilac food coloring. If you have any questions, use a piping bag for decorating.

1 cucharada de esencia de mantecado.

🧁 Process:

Start by separating the egg white from the yolks. In a saucepan, place the egg whites and sugar together and mix them together. Then, place them on the stovetop. You can use it directly on the stovetop or in a double boiler. The secret is to constantly stir the egg whites so the sugar dissolves. Don't let it boil. This should be as hot as a kettle. Place your finger on the egg white and measure the heat.

Once it's at the desired temperature, transfer it to the mixer at moderate speed. Once it has thickened, turn it up to maximum speed until it reaches a peak. Add the tablespoon of shortbread essence and the lemon juice, adding drops of the desired color, beating slowly until you reach the desired temperature.

Once it's ready, decorate with a pastry bag and a large nozzle that allows you to make half rosettes. Finally, add different colored frosting.

🧁 Procedimiento:

Comenzare separando la clara de las yemas y en una olla colocamos las claras junto con el azúcar y las mezclamos luego las llevamos al fuego puede ir directo a fuego o en baño María, el secreto es revolver constantemente las claras para que se diluya el azúcar, no podemos dejar hervir esto debe calentar como sería el calor de tetero, tu le colocas tu dedo y mides el calor.

Al estar en el punto lo pasamos a la batidora a velocidad moderada y cuando haya agarrado cuerpo la llevamos velocidad máxima hasta obtener a punto de pico, agregamos la cucharada de esencia de mantecado, el jugo del limón y vamos colocando gotas del color deseado y batiendo poco a poco hasta llegar al punto que queremos.

Al estar lista procedemos a decorar con una manga y una boquilla grande que nos permita hacer medios rosetones, al finalizar le colocamos diferentes escarchas de varios colores.
