Every evening, I crave some snacks, and I really love making different kinds of them—especially sweets! Today, I tried making a sweet dish that’s very close to my heart: “Chhannar Sandesh” (Milk Paneer Fudge). I made it in a very simple way, yet it turned out just like the ones from the sweet shops. Personally, I absolutely loved it.

We should always prioritize what makes us happy. Doing something for ourselves—like cooking what we love—doesn’t need a special occasion. Whenever I crave something, I just go straight to the kitchen. I truly enjoy cooking and learning new recipes. Every girl loves when someone appreciates her cooking—it inspires her to try new dishes and find joy in the art of cooking. Among all types of dishes, my favorite is definitely desserts.

For my Sandesh, I used only a few ingredients: milk, sugar, a few aromatic spices, milk powder, and a little flour. With just these, I created such a beautiful sweet!

Here’s how I made it:
First, I boiled 2 liters of milk in a pan. In a small bowl, I mixed 2 tablespoons of vinegar and 4 tablespoons of water to make a solution.

When the milk started boiling, I slowly added the vinegar mixture to curdle it. Then I separated the chhanna (paneer) using a strainer and drained out all the water. I wrapped the chhanna in a clean cloth and kept something heavy on top for about 30 minutes to remove excess water. After that, I kneaded it well with my hands until smooth.

Next, in a pan, I added 1 cup of sugar and caramelized it slowly on low to medium heat.

This step needs patience—don’t rush or the sugar will burn and turn bitter.

Once the caramel was ready, I added ½ cup of milk and let it simmer with cardamom, bay leaf, and cinnamon. Then I added the prepared chhanna and stirred continuously. At this stage, it might look a bit runny, but don’t worry—it thickens as it cooks. You can add a little flour if you like (I did). Keep stirring constantly. Before removing it from the heat, I added ½ cup of milk powder (you can use up to 1 cup). The milk powder really enhances the flavor and texture.

When done, I spread the mixture on a plate, leveled it with my hands, and cut it into small pieces using a knife. You can also shape it however you like. Then I let it cool down to room temperature and placed it in the fridge for 1–2 hours to set.

And that’s it! Our homemade Chhannar Sandesh is ready.
It turned out absolutely delicious—you must try it too! I always receive lots of appreciation for my cooking, and that inspires me even more.
Especially for me, it often happens that after eating, I suddenly crave a little sweet — I don’t even know why, but I just feel like having something sugary. Sometimes when I feel a bit hungry in the evening or even wake up at midnight, I like to have a small piece of sweet and then drink some water. Honestly, it feels so refreshing and satisfying.

I don’t really enjoy drinking plain water by itself. If there are dates at home, I usually eat one or two and then drink water — that feels much better to me. I can’t just drink water repeatedly without anything else, so I like to keep some sweets prepared at home. I take a small bite of something sweet every now and then and then drink water.

For me, this is actually a simple and enjoyable way to build the habit of drinking water more often. I think many people feel the same — that drinking plain water alone isn’t always pleasant. So you can try my little trick: keep a few sweets or small snacks ready, take a tiny bite, and then drink some water. It not only satisfies your cravings but also helps you stay hydrated!
