Hello hi everyone how are you greetings to all of you and welcome to my blog. I hope you guys all are well and making delicious food in the community. I am also here with my new recipe for sharing all of you in @hivefood. Today I cooked very delicious and my mother favourite recipe which name is Potatoes and eggplant recipe with boiled rice. First I will tell you the ingredients then start the process.
Ingredients
Half kg eggplants
Half kg potatoes
One cup yogurt
Spices
Salt
Red chilli
Turmeric
Dry coriander
Chilli flakes
Garam masala
Process
First I washed then cut potatoes and eggplants into small pieces . Then I took one cup yogurt mixed one tablespoon turmeric one tablespoon red chilli and one tablespoon salt in the yogurt and mixed well.
At the other side I dipped eggplants and potatoes in the masala for frying in the oil. For masala I added turmeric red chilli and salt in two tablespoons water then mixed well. Later on I fried eggplants and potatoes in the pan.
After this I took some oil in a pan added garam masala in the oil for tarka. Then I added mixed masala yogurt in the tarka.
I cooked yoghurt for 2.3 minutes then I added fried potatoes and eggplants in the yogurt gravy. And again cooked.
I covered with lid on dun at low flame. When oil separated I also spreaded fresh green coriander at the last. I opened the lid and my spicy potatoes and eggplants recipe is ready for serving.
Final look
