Raw egg is such a tricky think to use in cooking. If you were in Japan, or willing to pay a lot in UK, you'd have no problem at all. Great effort to pasteurise them yourself, it's so difficult to get it right.

Thank you! I was quite proud of the eggs. It's a real faff though to try and get the timings and power of the microwave correct, but it was worth it. Perhaps I'll try sous vide next time.

They had a spoonful each, which was the best I could expect, lol! Next time I'll try a drop of rum in it and that will be a different matter!
