Cooking Ginisang Kalabasa with Malunggay Leaves

in Hive Food4 days ago

Hello, how are you? Guess what? Another week, raining start again. I hope it will not last a week again, just like the last time, because my cant take it anymore and I got sick.

That is why I took days off, healing from everything haha. This is why I hate getting sick, because it felt like my world was ending and my mood is super gloomy, and I hate that.

A few days ago, my mom asked us if we wanted to have a flu vaccine, and I felt relief. It has been years since our last vaccine, so I thought we'd get a shot, and that's it- wrong! My whole body aches, and that's the sign that the vaccine works, and it is travelling around your body, and yeah.

Now I feel great and happy! So, every weekend or when my parents are home, I always cook home meals for us to eat, and I'm always in charge of cooking lunch or dinner or vise versa when my brother is not around to cook.

I've been self-conscious lately about what I eat, so I am trying to cook home meals more often or eat healthier. Kalabasa or pumpkin is one of the healthiest vegetables. To make it as healthy as possible, I added Malunggay leaves to it to power it up, so yeah.

Ingredients I Used:

  • 1 tbsp. Cooking Oil
  • Meat
  • 4 Garlic
  • 2 Red Onion
  • Ginger
  • 3 Tomatoes
  • 2 tbsp. Bagoong (Fish Sauce)
  • Chicken Broth Cube
  • Kalabasa (Pumpkin)
  • Malunggay Leaves
  • 1 1/2 Cup Of Water

Let's Cook!

In a hot pan over high to medium heat. I am going to add the meat. It is up to you what meat you use. I prefer pork this time, because that's what I have.

I fried it to crispness. The crispier, the better.

Add the aromatics, such as garlic, red onion, and ginger. I sauté them until the aroma comes out.

Add the tomatoes next.

Cook it until the tomatoes become mushy. This will make the dish's broth colorful and more appetizing. And gives a unique taste to it.

Add 2 tablespoons of bagoong. You can use the usual fish sauce. And I let it set in.

I added 1 1/2 cups of water. When it starts boiling, I am going to add 1 chicken broth cube.

Add the kalabasa (pumpkin). Cook it for about 5-7 minutes over medium to high heat, with the lid.

Then I added the malunggay leaves.

Cook it for only one minute.

This is what it looks like after.

Plate it.

Close-up look.

Happy eating! :D
