RECIPE: rice with lentils, vegetables and curry (ENG-ESP)

  • Good evening friends, I wish you a happy weekend... Below I explain "step by step" how to prepare an exquisite "rice with lentils, vegetables and curry". To enjoy a VERY tasty and appetizing contrast, make a sauté with onions, peppers and sweet peppers... the result was really spectacular!
    I hope you enjoy the process of this healthy and nutritious recipe, I'm sure you'll love it as much as I do!
  • Buenas noches amigos, les deseo un feliz fin de semana... A continuación les explico “paso a paso” como preparar un exquisito “arroz con lentejas, vegetales y curry”. Para disfrutar de un contraste MUY sabroso y apetitoso, realice un sofreír con cebollas, pimientos y ajíes dulces… el resultado quedó realmente espectacular!
    Espero disfruten el proceso de esta saludable y nutritiva receta, estoy segura que la amarán tanto como yo!

  • INGREDIENTS: onions, green pepper, sweet chilies, garlic cloves, bay leaves, 1 cup of lentils, 1/2 cup of rice, curry, pepper, cumin, butter, mild olive oil, salt and raisins to decorate.
  • INGREDIENTES: cebollas, pimiento verde, ajíes dulces, dientes de ajo, hojas de laurel, 1 taza de lentejas, 1/2 taza de arroz, curry, pimienta, comino, mantequilla, aceite de oliva suave, sal y pasitas para decorar.

  • We incorporate the lentils in a deep pot, previously washed... we integrate the bay leaf. For 1 cup of lentils put 2 cups of water, cook over "high" heat until they soften a little, since they will finish softening when we incorporate the rice. In this step I suggest you do not put salt.
  • Incorporamos en una olla honda las lentejas, previamente lavadas… integramos la hoja de laurel. Para 1 taza de lentejas coloque 2 tazas de agua, cocinamos a fuego “alto” hasta que se ablanden un poco, ya que terminarán de ablandarse cuando incorporemos el arroz. En este paso les sugiero no colocar sal.

  • While we wait for the cooking time we are going to prepare our succulent sofrito, which will be the main base to enjoy a VERY tasty and appetizing flavor! Add 1 teaspoon of butter and 1 tablespoon of mild olive oil to a non-stick pan, sauté the onions, cut into julienne strips, along with the garlic cloves (finely chopped)... season with salt and pepper.
    We add the pepper, preferably "green", along with the sweet peppers (we extract the seeds).
    We reserve to use in the final step.
  • Mientras esperamos el tiempo del cocción vamos a preparar nuestro suculento sofrito, que será la base principal para disfrutar de un sabor MUY sabroso y apetitoso! Agregamos 1 cucharadita de mantequilla y 1 cucharada de aceite de oliva suave a un sartén antiadherente, sofreímos las cebollas, cortadas en julianas, junto con los dientes de ajo (finamente cortados)... salpimentamos.
    Añadimos el pimiento, preferiblemente “verde”, junto con los ajíes dulces (extraemos las semillas).
    Reservamos para utilizar en el paso final.

  • When the lentils are "semi-soft" we place the rice... We season with: curry, pepper, cumin and salt. We add the onion sauce that we had reserved, we adjust the amount of water, in my case put 2 cups of water.
    We cook the first 5 minutes over "high" heat, mix occasionally. Then we cover our preparation and finish cooking over "low" heat, until we check that it is ready. The cooking time will take approximately 25 minutes
  • Cuando las lentejas estén “semi-blandas” colocamos el arroz… Aliñamos con: curry, pimienta, comino y sal. Incorporamos el sofrito de cebolla que teníamos reservado, ajustamos la cantidad de agua, en mi caso coloque 2 tazas de agua.
    Cocinamos los primeros 5 minutos a fuego “alto”, mezclamos de forma ocasional. Luego tapamos nuestra preparación y terminamos de cocinar a fuego “bajo”, hasta comprobar que está listo. El tiempo de cocción tardará aproximadamente 25 minutos.

Love the sauté combo, onions, peppers, and sweet peppers really bring out that smoky depth before the curry hits. The layers of flavor look insane, especially with the lentils.
