Below, I'll explain how to prepare a delicious “cream of broccoli and potato soup with sautéed onions and sweet peppers.” You can enjoy this recipe as a side dish or when you want a light, low-calorie dinner... Let's put on our aprons and make this delicious dish!
  • Buenas noches queridos hivers, espero estén pasando una fantástica semana! En esta ocasión, comparto con ustedes una receta muy saludable y nutritiva, a continuación les explico como preparar una deliciosa "crema de brócoli y patatas con salteado de cebolla y ajies dulces". Pueden disfrutar esta receta como guarnición o cuando deseen cenar un plato ligero y bajo en calorías... Pongámonos el delantal para realizar esta exquisitez!

  • INGREDIENTS: broccoli, potatoes, onion, garlic cloves, fresh coriander, sweet peppers, olive oil, butter, pepper and salt.
  • INGREDIENTES: brócoli, patatas, cebolla, dientes de ajo, cilantro fresco, ajies dulces, aceite de oliva, mantequilla, pimienta y sal.

PREPARATION/PREPARACIÓN

  • Cook the broccoli, previously washed and disinfected, over high heat together with the potato and garlic clove. I suggest NOT adding salt at this stage.
  • Cocinamos a fuego "alto" el brócoli, previamente lavado y desinfectado, junto con la patata y el diente de ajo, les sugiero NO colocar sal en este paso.

  • When we see that the broccoli has softened, we strain it and set it aside. We wait for the potato to soften so we can remove the skin.
  • Cuando comprobemos que el brócoli se ablandó colamos y reservamos. Esperamos que la patata se ablande para extraer la piel.

  • Next, add the broccoli, potatoes, and garlic clove to the blender jar. Add the broth used to cook the vegetables and blend on high speed until smooth and lump-free. Season with salt and pepper.
  • A continuación, incorporamos en el vaso de la licuadora el brócoli, junto con la patatas y el diente de ajo... Agregamos el caldo donde cocinamos nuestras verduras, licuamos a velocidad "alta" hasta conseguir una textura homogénea y libre de grumos. Condimentamos con pimienta y sal.

  • In this step, we are going to sauté our onion and sweet peppers. This sofrito will add a VERY succulent contrast! Add olive oil and butter to a nonstick skillet, sauté the onion and sweet peppers (finely chopped), season with salt and pepper... Cook until they take on a crystalline texture and are lightly browned.
  • En este paso, vamos a saltear nuestra cebolla y ajies dulces, este sofrito aportará un contraste MUY suculento! Incorporamos aceite de oliva y mantequilla a un sartén antiadeherente, sofreímos la cebolla y los ajies dulces (finamente cortados), salpimentamos... Cocinamos hasta comprobar que tomaron una textura cristalina y ligeramente dorada.

  • Add the sautéed mixture to the broccoli and potato cream, reserving some to use when plating up... Mix until well combined.
  • Colocamos el sofrito a la crema de brócoli y patatas, reservamos una parte para utilizar al momento de emplatar... Mezclamos hasta integrar bien.
