Hello, dear Hive Food community! One of the things I enjoy most about cooking is trying new ingredients and discovering how a small change can completely transform an everyday recipe. This time, my inspiration came from a few seasonings I recently bought and couldn’t wait to test. I decided to prepare chicken in sauce with potatoes and eggplant, but first I marinated the chicken with chimichurri and a seasoning that has a light lemon flavor. As soon as everything started cooking, the wonderful aroma filled my kitchen, and I knew I had made the right choice. The final dish was homemade, comforting, and full of flavor, with a fresh twist that made a traditional recipe feel brand new. I hope this recipe inspires you to experiment with new flavors in your own kitchen.
1.200 kg de pechuga de pollo, 4 papas, 1 berenjena, 5 dientes de ajo, 120 ML de salsa de tomate, condimentos (chimichurri, lemon pepper, orégano, 2 hojas de laurel, sal), aceite, 1/2 cucharada de azúcar.

Para iniciar lavé los vegetales y machaqué el ajo, además me encargué de marinar el pollo con los condimentos, mariné con chimichurri y lemon pepper, también añadí una pizca de sal, dejé que los sabores se concentraran durante 1 hora.
To start, I washed the vegetables and crushed the garlic. I also marinated the chicken with the seasonings—chimichurri and lemon pepper—and added a pinch of salt. I let the flavors meld for 1 hour.


En una olla previamente calentada agregué un poco de aceite, coloqué el pollo y terminé de agregar los otros condimentos, orégano, laurel, también incorporé los dientes de ajo, sofreí hasta dorar el pollo, en ese punto incorporamos los vegetales.
In a preheated pot, I added a little oil, placed the chicken in it, and added the rest of the seasonings—oregano and bay leaves—as well as the garlic cloves. I sautéed everything until the chicken was golden brown, at which point I added the vegetables.


Tras pasar unos minutos añadimos la salsa o pasta de tomate junto a 1/2 taza de agua, mezclamos todos los ingredientes, es opcional, pero al usar pasta de tomate me gusta agregar 1/2 cucharada de azúcar para nivelar acidez del tomate, ahora coloquen una tapa y dejen cocinar hasta espesar, no olviden verificar los sabores.
After a few minutes, add the tomato sauce or paste along with 1/2 cup of water, and mix all the ingredients together. This is optional, but when using tomato paste, I like to add 1/2 tablespoon of sugar to balance the acidity of the tomatoes. Now cover the pot and let it cook until it thickens—don’t forget to taste and adjust the seasoning.
