Today i would like share the recipe of Fried Potato Curry with no onion & garlic, which is madeup of fried potato dipped in Tomato gravy with aromatic and flavourful Indian Spices. In India there was Navratri days last week in which onion n garlic are allowed to eat during these days as we worship Goddess Durga for Nine Days. There are variation of way to prepared gravy, but making it without onion & Garlic is not easy, instead of onion & garlic, I added almond & Fox Nuts. It is perhaps one of the handy recipes to have and especially during the festival or vrat season to feed your family and Friends.

Ingredients 📃

• 2 Tomatoes.
• 4 potatoes.
• 2 Slit Green Chilli.
• 1/2 cup oil of frying.
• 4-5 Almonds.
• 15-20 Fox Nuts.
• 1 cup of milk.
• 1 tap of cumin seeds.
• Pinch of asafoetida.
• 1 tsp turmeric Powder
• 1 tsp Kashmiri Red Chilli Powder.
• 1 tsp chilli powder(optional).
• 2 tbsp coriander powder.
• 1 tsp garam masala.
• 2 tsp kasuri methi.
• Water as required.
• Salt to taste.
• Coriander leaves for Garnish.
Process 👨🏻🍳

Heat the oil in the kadai, then in hot oil add the diced Potatoes,fry potatoes till aloo get the crispy outer layer or light brown in colour. Keep it aside

Meanwhile, in a grinding jar, add tomatoes, green chilli, Fox nut, Almond and Milk. Grind it to make smooth creamy Paste.

Heat the oil in the same Kadai/Pan.

Add cumin seeds and asafoetida,

turn off the flame and kashmiri red chilli powder, saute until it turn aromatic.There is high chabce of burning red Chilli powder, so be careful.

Pour the drop of water to avoid buring of Red Chilli.

add tomato puree into the kadai.

also keeping the flame on low turmeric, chilli powder, coriander powder, Garam masala and Salt. Mix it well so that every spices combined well.

On low flame saute till the oil releases from tomato. when your gravy is ready then crush the kasthuri methi between your hand palm then add to gravy.

Now add the fried Potatoes into the gravy, stir thoroughly so that everything combined well.

now add water and adjust consistency, cover and boil for 5 more minutes or till potatoes absorb spices.

Your Potatoes gravy is ready to serve.

Served with flatbread - Lachha Paratha, Chatpati, Paratha or Stream Rice, depending on your Choice.
