Today i would like to share the Dry Mix Veg recipe. It is all Vegetables of your choice Coated with automatic Indian Spices. It is easy and quick recipe which can be serve as lunch / Dinner or in Tiffin Box with Roti or Parathan or as Side Dish to your meal. It is tasty and Healthy recipes as it contains all the vegetables, even you add more vegetables as your choice and availability in your Home.

Ingredients📃
• 1 Diced Potato.
• 1 Chopped Carrot.
• 1 Chopped Capsicum.
• 3-4 Cloves of Garlic.
• 1 chopped Onion.
• 1 chopped Tomato.
• 1 cup Corns.
• 2 tbsp of oil.
• 1 tbsp of Cumin seeds.
• Pinch of Asafoetida.
• 1 tbsp of turmeric powder.
• 1/2 tbsp of Garam Masala.
• 1/2 tbsp of Red Chilli Powder.
• 1 tbsp of Kathuri Methi.
• Salt to taste.
• one cup of water.
• Green Coriander Leaves for Garnish.
Process 👨🏻🍳
Firstly wash all your vegetables to remove the dirts and chemical from it then Chopped the onion, Tomato, garlic and Capsicum in a plate.
Take a big vessel fill up with water cut the potato, Carrot and put Corns all together.
Heat the oil in the kadai, add the cumin seeds and Asafoetida wait untill it starts crackling.
Now on low flame saute the Onion & Capsicum together untill it cook well.
Now add chopped tomato, Cooked it on low Flame untill tomato get soft in Texture.
Now add spices - tureric power, red Chilli powder, Garam masala one after the another on low Flame, So that your spices didn't get burn, be very Careful.
Now add the chopped vegetables, add one cup of water, mix it Well so that masala get well coated with the vegetables. The size of the potatoes is big hence water was added so that the vegetable gets cooked quickly and cover the Kadai/pan so thats vegetable cook in stream quickly.
now add the kathuri Methi crushed between the your palm, Once the vegetable is cooked on high flame, water in it will dry up. Mix it Gently.
Garnish it with Green Coriander leaves, serve it with breads(roti or paratha) even you enjoy it as side dish in your Meal. Even if you used it as Stuffing for your wrap or sandwiches.
