
El ingrediente poco común, para mí, por lo menos, es la coca cola, no suelo utilizar esto en preparaciones de ninguna índole, de hecho, poco la consumo como bebida, sin embargo, ya que tenía en casa, me dije, esta es la oportunidad de probar, y les cuento que ahora quiero probar unas cuantas recetas que he visto con este peculiar ingrediente. Como era de esperar, hice algunos ajustes de acuerdo a los ingredientes que tenía en casa, como ejemplo, la azúcar morena, fue sustituida por panela o papelón rallado, ya que en el video hacen énfasis en que no se debe usar azúcar refinada, el resultado, definitivamente exquisito.

Esta es una cocción que conlleva un tiempo razonable, por el tipo de corte y la dureza de la misma, para disminuir el tiempo de cocción, utilice un truquito de cocina, que amo, y es, remojar las costillas en suero lácteo, utilizo el resultante del yogurt griego, esto no afecta el sabor de la carne, por lo que, se puede utilizar sin ningún temor, pero, acompaña y te explico (ya que no puedo mostrar por completo) a detalle el proceso.

Ingredientes
1000 gr | Tiras de costilla de cerdo | 300 ml | Suero lácteo (opcional) |
1/2 Cda | Sal |
1/4 cdta | Pimienta negra molida |
2-3 Cdas | Mostaza |
1/3 Taza | Azúcar morena o panela rallada |
1/4 Cdta | Comino en polvo |
1 Cdta | Ajo en polvo |
1 Cdta | Cebolla en polvo |
1 Cdta | Paprika ahumada |
500 ml | Coca cola |
1/2 Taza | Salsa BBQ |
1/4 Taza | Cafe expreso |

Lo primero que hacemos, es condimentar con sal y pimienta, nuestras costillas y colocarlas en un tazón, para cubrirlas con el suero lácteo, las dejamos allí, por al menos 15 minutos, con una hora de reposo, el resultado es mejor y el tiempo de cocción menor. Una vez pasado el tiempo, retiramos el líquido y secamos el exceso, para pintar las costillas con mostaza.
En un tazón mezclaremos, la azúcar morena, o la panela rallada en mi caso, paprika ahumada, cebolla y ajo en polvo, y bañaremos las costillas previamente pintadas con mostaza con esta mezcla, por ambos lados; procedemos a calentar un sartén con un par de cucharadas de aceite, y sellaremos nuestras costillas por ambos lados.

Una vez selladas las costillas, ya podemos ver ese hermoso color dorado, le agregamos la salsa BBQ, yo obviamente utilizo mi receta personal, las marcas comerciales no me gustan, y desde que encontré una a mi gusto, con ella me quede y es la que utilizo para las hamburguesas de mi negocio.

Even Mathias, who doesn't usually eat this type of food, enjoyed them so much. And the sauce that was left over was spectacular. It was impossible not to want to pour it over boiled yuca or a good rice dish. This recipe really exceeded my expectations, and I couldn't help but share it with you.

However, since I had some at home, I thought, “This is my chance to try it,” and now I want to try a few recipes I've seen with this unusual ingredient. As expected, I made some adjustments based on the ingredients I had at home. For example, I substituted brown sugar for panela or grated sugar cane, since the video emphasizes that refined sugar should not be used. The result was definitely delicious.

This is a dish that takes a reasonable amount of time to cook, due to the type of cut and its toughness. To reduce the cooking time, use a cooking trick that I love, which is to soak the ribs in whey. I use the whey from Greek yogurt, which does not affect the flavor of the meat, so you can use it without any fear. But, follow along and I'll explain (since I can't show you everything) the process in detail.

Yo le agregue a mitad de cocción, media taza de agua, pues como el sartén donde las cocine, es grande, el líquido no las cubre bien, el resultado, definitivamente, delicioso, incluso, Mathias que no es de comer este tipo de comidas, se las comió con tanto gusto, y la salsa que quedo, un espectáculo, imposible no querer bañar esa yuca hervida, o un buen arroz, con ella, de verdad, supero mis expectativas esta receta, y no podía dejar de compartirla con ustedes.
