After the days work yesterday, in the evening, I didn't have the energy to go to the kitchen to prepare dinner so we decided that we can munch on something light and healthy. So, I decided to take a walk down the street to buy some roasted corn.
Corn is a seasonal crop in Nigeria and it is in abundance during the rainy season. But some farmers go the extra mile to cultivate it during the dry season using irrigation or pouring water on the crops as they grow. Though the corn becomes very expensive during the dry season because of the stress of cultivating it and it is also scarce. This is the major reason I love to enjoy it as much as I can when it is in season.
Whether it is boiled or roasted, corn is simply packed with deliciousness. It is one of those snacks that you can enjoy everyday that is filled with flavor and nutrients. I always enjoy corn better when it is fresh - some people sell corn that has been harvested for like two or more days which would lack that fresh taste. I fancy my roasted corn when it is soft and crunchy, the burnt like flavor is a turn on.
The corn seller's spot is just a stone's throw from my house, she is using the front of someone's fence with an umbrella to create shade since she's only selling from afternoon to late in the evening. I saw a little gathering of people some standing, some sitting as I approached her spot, they were patiently waiting for the corn to be done. The corn is being roasted on a metal mesh that is placed on the heat from a charcoal pot, with the charcoal pot placed on a sack filled with sand to give it some height. Some other corn sellers use abandoned tyres or bricks or even metal frames.
So, just as I was about to choose the ones that I would love to buy, the seller told me that they have already being taken by some of the people hanging around and I would have to wait for her to begin the next sets. I stepped aside to one corner engaging myself with my phone and also looking at passerbys to while away the time and before you know it she had began arranging new corn on the metal mesh for us to select from. And within few minutes the new sets began to roast to perfection. After they were properly roasted she packaged the ones that I had selected for me and I paid her and headed back home.
I began to munch on the corn as I was heading back home and there's something so satisfying about eating freshly roasted corn. I walked home enjoying every bite and I had keep the ones that my husband and son will eat as well.
