STEP-BY-STEP GUIDE ON HOW TO BOIL SWEET POTATOES AND UNIQUE SPICY SAUCE MADE WITH PALM OIL

I'm back to the kitchen today and I will be sharing with you how to make boiled sweet potatoes with a unique sauce made with palm oil and other ingredients. This meal is perfect for either breakfast, lunch or dinner.

Ingredients

  • Sweet potatoes

  • Tomatoes

  • Scotch bonnet

  • Onions

  • Soko leaf

  • Smoked fish

  • Palm oil

  • Seasoning cubes

  • Salt

Step by Step

  • Let's start by preparing the sweet potatoes. So the first thing we'd do is to wash it thoroughly to get rid of dirts.

  • After you have washed it, peel and cut into desired shape and size.

  • Set on the pot, add water that is enough to cover the sweet potatoes and begin to boil. You may decide to sprinkle some salt. But sweet potatoes are naturally sweet so you may skip this step.

  • Boil until it is soft and drain the water before you set aside.

  • Let us continue with prepping the ingredients for our mouthwatering sauce.

  • Wash your tomatoes and scotch bonnet, slice into tiny pieces and set aside. You may decide to use your blender for this step by blending roughly.

  • Next, wash your onions. Slice some into your desired size and grate the rest using a grater.

  • Next, remove all the bones in your smoked fish and shred them into pieces.

  • Place your pan or pot on meduim heat and heat the palm oil for some seconds. Remember that we want that uniqueness and richness of the palm oil so we would not allow it to bleach.

  • Next, add the sliced onions first and stir for some seconds before adding the grated onions. Stir for about 1 minute to allow them well sautéed.

  • Next, throw in the tomatoes and stir well. Then add the scotch bonnet as well. Ensure you stir fry for about 10 minutes to ensure it is well cooked. Note that it may get burnt if you don't stir occasionally.

  • Add your seasoning cubes at this point and some salt to taste.

  • Then add your deboned fish to the sauce and let it simmer for some extra 2 minutes to 5 minutes.

  • Finally sprinkle your soko leaf into the mix and allow to simmer for like 2 minutes and take off the heat.

  • At this point your sweet potatoes and sauce is ready to be served and enjoyed.

There is no doubt that there is absolutely a unique feeling about cooking with palm oil, apart from the health benefits, there is this natural aroma that fills the kitchen while you are cooking that makes a person begin to salivate even without seeing the meal yet. While vegetable oil may have been another alternative to make the sauce, palm oil brings a reddish colour and a unique taste that is unmatched to any meal. In my opinion, making this kind of sauce would be incomplete if vegetable oil were to be used.
