In this post I will be sharing with you how I made some fried rice for my family. This post have been in my draft for some weeks so it is time for it to go live so that the world can see the pot of beauty I created in my kitchen.

The meal was prepared on a Sunday and you know that it is key that Sunday rice should be special and unique from the regular meal you eat during the other days of the week. Well, there is little or no work on Sundays, so all energy can be converted into making your family happy by making a delicious meal for them.

Fried rice is a popular dish in Nigeria (I can't say about other parts of the world, though I know it doesn't have its origin in Nigeria. You may share with me in the comment section if fried rice is widely consumed in your country). It is often served with jollof rice at parties and restaurants - you can request a portion of fried rice and a portion of jollof rice which will be served in halfs on your plate. I doubt if there is a restaurant or Nigerian party (Owanbe) where you wouldn't find some fried rice - it is that popular.

Ingredients

  • 3½ cups of rice

  • 1 big onion

  • 3 scotch bonnet

  • 2 green bell pepper

  • Green peas

  • 4 big carrots

  • 2 tbsp vegetable oil

  • 1 tsp curry

  • 1 tsp thyme

  • Seasoning powders - Chicken glory, MrChef, MaDish

  • Seasoning cubes

  • Salt to taste

Step by Step

  • Let's begin by prepping everything we will be using starting with the veggies.

  • Wash your veggies thoroughly, that is, green bell pepper, scotch bonnet, carrot, onions, green peas

  • Then slice or dice into your desired size. Set aside.

  • Next, wash your rice as well and add some vegetable oil into a pot placed on medium heat. Pour the rice into the pot and stir it continuously for about 3 minutes so that it wouldn't get burnt.

  • The reason for the above procedure is to make sure that your rice doesn't stick to each other when you're done. It will make the rice grains stand firmly.

  • When you are done, add some water and begin to add your seasoning powders - I used about three different seasoning powders that are used for cooking fried rice.

  • Then toss in your seasoning cubes, curry, thyme and salt to taste.

  • Cover the pot so that it can cook properly.

  • On a different burner, place another pot or frying pan, add some oil and allow it to heat up on medium heat.

  • Start by adding the sliced onions, and stir fry for few seconds. Then add your scotch bonnet, green bell pepper, green peas and carrots one after the other. Add more seasoning and stir fry until they are well cooked.

  • Check your rice and if you confirm that it is done, divide it into half or about three portions and begin mixing your veggies with the rice in a pot.

  • If you're not going to eat everything at once, you may mix only the portion you will be eating at a time to prevent it from getting bad quickly.

  • Your fried rice is ready.
