In this post I will be sharing with you how to prepare ofe ora, a delicacy which originates from the Igbo ethnic group in Nigeria but widely loved by all. The soup got its name from the main ingredients which is the leaves of a tree known as oha. Nowadays we buy oha leaves in the market unlike those days when people use to pluck it in their house just like every other leaf.
Ingredients
- Oha leaves
- Ponmo (Cow skin)
- Stockfish
- Yellow pepper
- Onions
- Fermented locust bean
- Achi powder
- Crayfish
- Palm oil
- Seasoning cubes
- Salt
Step by Step
- We will start by washing the oha leaves and shred them into pieces using hands.


- There is a myth that your oha leaves will be bitter if you cut it with knives.
- After that wash your beef, fish, stock fish, ponmo and other proteins thoroughly and set aside.

- Next wash your pepper and onions and blend it roughly.
- Next, mix your achi powder (thickener) in some warm water until it becomes a smooth paste.


- Next, place a pot on medium heat and add some water or your meat stock if you had pre-cooked your meat. If not pre-cooked, add your beef, fish, stockfish, cow skin and season it.


Cook until they become tender.
Then add into the pot your blended pepper mix and some crayfish (preferably grounded). You may opt to grind it with the pepper and onions.

Next add your fermented locust bean into the pot for that native sensation.
Next pour in your palm oil and cover the pot to cook for about 10 to 15 minutes on medium heat.
Then it is time to add your achi into the pot. You can use some warm water to loosen it up if it has become to thick. Pour into the pot and stir properly to prevent forming lumps.
You can also loosen up your soup with some meat stock or water if it is becoming too thick.

Now is time for the shredded oha leaves to go into the pot and remember to give it a good mix.
After about another two minutes you can taste your soup and adjust the taste if needed.

Your soup is ready to be enjoyed.
You can serve it with some fufu/akpu, pounded yam, garri/eba, etc.
