In this post I will be sharing with you how to make moin-moin with leaf. This is my favourite type of moin-moin because of the flavour the leaves add to it. Apart from scotch bonnet I also add tatase and shombo pepper to my beans before grinding to give my moin-moin a colorful look. Moin-moin is best enjoyed with pap, custard or bread. Though some people pair it with rice, pasta and the likes.
Ingredients
2 cups beans
5 Tatase
3 scotch bonnet
2 Onions
3 eggs
½ cup vegetable oil
Salt
Uma leaves
Step by Step
The first step is to peel the skin of the beans and wash it throughly until it is clean.
Next, wash your peppers and onions. Place the beans and the pepper and onion in a blender and blend until you have a smooth mixture.
Now, pour the mixture into a mixing bowl, add your vegetable oil, seasoning cubes, salt and sliced onions.
Then break in your eggs into the mixing bowl and mix together. You may decide to boil your eggs before adding to each wrap of moin-moin.
Now rinse your uma leaves with clean water and some salt. Remember to cutoff the stem.
Place your pot on medium heat add some water enough to steam your moin-moin. You nay put the stems of the leaves at the bottom of the pot or use any small-sized wooden or aluminium plates. This is to ensure water doesn't easily enter the
leaves and wash away your moin-moin.Then begin to wrap your moin-moin with the leaves and place in the pot.
Cover the pot and allow to steam for about 40 minutes before turning off the heat.
Serve and enjoy hot with pap, custard or bread.
