HOW I BAKED BANANA CAKE FOR THE FIRST TIME USING EVERYDAY INGREDIENTS AND IT TURNED OUT AMAZING

Baking has gradually become a part of my lifestyle to the extent that I now do it effortlessly even though I'm not a professional baker but I observed that I have been repeating my favorites for some time. By that I mean chin chin, meat pie, plain cakes, red velvet cakes and the likes. My first time of trying to make samosa dough I ruined the process because the dough was too thick that what it is expected to be. Samosa is a snack that is popular in Nigerian parties and it is usually accompanied with spring rolls, puff-puff, and grilled chicken. They are called small chops. Well, that's a topic for another day.

So, today I decided to try out something I haven't baked before and it is a banana cake, some call it banana bread. It is a recipe I have heard people talk about but I have never tried it before. Surprisingly, it is only just one ingredient that makes the difference. Ripe bananas is that ingredient that transforms the cake by giving it extra layer of flavour and natural sweetness.

So, let me walk you through the process...

Ingredients

  • 1½ cups all purpose flour

  • 5 small-sized banana

  • ½ cup milk

  • ½ cup sugar

  • 150g baking butter

  • ½ medium-sized nutmeg seed

  • 1 tsp baking powder

  • 3 eggs

Step by Step

  • The first thing we would do is to add our baking butter into the mixing bowl and toss in your sugar

  • Now we will mix the sugar and butter until it becomes foamy. This process needs to be done in the right way if you want your cake to come out well.

  • When you are done with that step the next thing is to crack your eggs into the baking butter and sugar mix and mix thoroughly until they are well blended.

  • Next add your nutmeg, milk and baking powder into the mix and give it a good mix.

  • Then peel your banana and mash it together before adding into the mixing bowl. This is the game changer in this recipe. This is the major ingredient that will change the cake from a plain cake to banana cake. Mix it thoroughly before adding your flour.

  • After adding your flour, mix it and pour into your baking pan or aluminium foil plates (like the one I used).

  • Preheat your oven before getting to the last step above. When your oven is preheated, place the cake in the oven and bake for about 30 minutes to 40 minutes.

  • Use a toothpick to check the center of the cake to know whether it is done or not. The toothpick needs to come out clean for you to know it's done.

The banana cake came out better than I had envisaged but the foodie in me wasn't happy that I was able to make just four plates. Next time I will ensure that I make a larger batch so that I can store in the fridge and enjoy it over a few days.
