In this post I will be sharing with you how to prepare groundnut soup. Groundnut soup is soup made from groundnut or peanut as some people will call it. It is a soup that is enjoyed in many countries in West Africa. Not sure which country it actually originates from but most West African countries eat this soup. It combines the amazing flavour of groundnut with other ingredients like palm oil, vegetables, spices, and meat/fish etc.
I have heard that some people opt for the peanut butter that is sold at supermarkets instead of processing the groundnut/peanut paste from the scratch. I haven't tried using peanut butter but Iearn it is as sumptuous as using freshly processed groundnut.
Ingredients
Groundnut
Palm oil
Ugu leaves
Scotch bonnet peppers
Onions
Beef
Ponmo
Seasoning cubes
Salt
Step by Step
We will start by prepping all the ingredients.
First, wash your scotch bonnet peppers and onions, then blend them together roughly. Set aside.
Wash your ponmo and beef thoroughly multiple times until they are clean.
Then wash your ugu leaves and set aside.
Measure out the quantity of groundnut you want and roast them in a dry pot placed on medium heat.
Roast until they are golden brown and be sure to stir constantly so that they won't get burnt and so that they will be evenly roasted.After roasting, allow it to cool off completely and blend in a blender until you have a smooth thick paste.
Next, season and cook the beef and ponmo until they are done.
Next add the pepper mix into the pot and allow it cook more with the beef and ponmo.
After about 5 to 10 minutes add your palm oil into the pot and watch how the aroma of your soup begins to fill the room.
Now it is time to add the groundnut paste into the pot. Let it cook for about 15 minutes on medium heat. Also stir at intervals to prevent burning.
Now add your sliced ugu leaves and allow it to simmer for about 3 minutes.
Your groundnut soup is ready. Serve it hot with your preferred swallow either pounded yam, semo, fufu or amala.
