Today I want to share with us how I prepared a different style of rice recipe I had used to prepare lunch.
Rice can be prepared in so many fashion and garnished go taste as desired. I refer to all methods as jollof rice if it contains all the seasonings within the rice.
Without further waste of time let's get to the process
Ingredients
I made use of local ingredients for this as I wanted it to have a natural taste, hence for the ingredients I have the following

- Short rice grain
- vegetables oil
- Seasonings
- carrots and cabbage
- Tomatoes, onions and Scotch bonnet peppers
- Fish
Preparation process
To prepare this I started by parboiling the rice and removing excess starch
Then I blended the peppers and tomatoes, diced the carrots and cabbage

Next I heated some oil in a pot until they were hot.

To this I added the blended peppers, onions and tomatoes

After much frying and upon losing their moisture contents I added some
water to it before pouring in the rice. Right after pouring in the rice I realized that I haven't added some seasoning cubes to it.
A pinch of salt was fine and then the seasoning came next. This is one of my favorites seasoning. I have about two to three favorite seasoning in the market.

We have to be careful about the type of seasoning we use for our meals as some them often leave an after taste feeling if they are used to cook our meals

I dipped in the fish clean and dry to steam up along the cooking rice.
The fish can be prepared in many ways either to fry this with some seasoning prior to it being added to our meals or we allow it to boiled in spices alongside whatever we are cooking.

I love eating rice with lots of fresh vegetables, the carrots and cabbage are always on standby for this, I had diced some and added it to the plate of meal.

Now I can decide to boil the carrots lightly alongside the rice like my aunty often do something to soften the carrots. Either way you chose to do this is just fine.
