When people talk about dieting, we tend to think it’s going to be a boring, flavorless experience, but it all depends on your perspective. I believe that dinner should be a light meal, since the body is preparing to rest. I usually prepare my dinner before 6 p.m. Generally, the key features are: smaller portions, light, and low in fat. They’re ideal for people with diabetes, since they don’t contain flour and won’t cause blood sugar spikes. That’s why today I’m sharing a recipe for tasty and healthy zucchini, carrot, and oat arepas. They’re easy to make, and you can even store them in the fridge. You can serve them with your favorite filling. An important note is that there’s no flour in the recipe. I’m posting this recipe because people are always asking how to make zucchini, carrot, and oat arepas.
INGREDIENTES/ INGREDIENTS
- 1 Calabacín.
- 1 taza de avena en hojuelas.
- 1 zanahoria.
- 1 cucharada de chía.
- 1 cucharada de ajonjolí.
- Una pizca de sal.
- 1 zucchini.
- 1 cup rolled oats.
- 1 carrot.
- 1 tablespoon chia seeds.
- 1 tablespoon sesame seeds.
- A pinch of salt.

PREPARACIÓN/ PREPARATION
- Lavar y pelar tanto la zanahoria como el calabacín. Luego rallar por el lado más fino.
- Wash and peel both the carrot and the zucchini. Then grate them using the finest side of the grater.
- Viertes en un bowl el calabacín y la zanahoria rallada, una taza de avena en hojuela, 1 cucharada de chía, 1 cucharada de ajonjolí, una pizca de sal.
- Place the zucchini and grated carrot in a bowl, along with 1 cup of rolled oats, 1 tablespoon of chia seeds, 1 tablespoon of sesame seeds, and a pinch of salt.

- Mezclar todo, no hay necesidad de agregar agua, la humedad del calabacín hidrata la avena en hojuelas. Dejar unos minutos. Seguir amasando hasta conseguir una masa consistente.
- Mix everything together; there’s no need to add water—the moisture from the zucchini will hydrate the rolled oats. Let it sit for a few minutes. Keep kneading until you get a consistent dough.

- Con las manos ligeramente húmedas hacer bolitas con la masa.
- With slightly damp hands, roll the dough into small balls.

- Darle forma de arepa.
- Shape it into an arepa.

- Mientras se calienta la plancha, pasar una servilleta con un poquito de aceite, luego colocar en la plancha las arepas, dar vuelta y vuelta hasta que estén doradas. Me gustan las arepas delgadas.😋
- While the griddle is heating up, wipe it with a napkin dipped in a little oil, then place the arepas on the griddle and flip them over until they’re golden brown. I like my arepas thin.😋
