For my salad I used a fresh lettuce, mix of olives, cucumber, plum tomatoes and ... cheese! Initially I aimed for a Greek salad so i used a big block of feta cheese... but it turned into something else!
Had a big block of Gudbrandsdalsost, a Norwegian chocolate cheese! It’s made from whey, milk, and cream that’s slowly boiled until the sugars caramelize, giving it a sweet, fudgy, almost chocolate-like flavor.
Even though it tastes a bit like caramel or cocoa... it doesn’t actually contain chocolate. I didn't wanted to overpower the salad with the sweetness so I only used little chunks!

Greek salad with feta works so well because all the flavors and textures balance each other almost perfectly. No harm done by adding a little bit of Gudbrandsdalsost for extra flavor!
The vegetables are fresh, juicy, and crisp. Tomatoes bring sweetness and acidity, cucumbers add crunch and coolness, and olives add a deep salty richness. Tasty and a bit simple!
That’s where feta makes everything click. It's salty, tangy, and creamy... acting like a flavor amplifier. A small amount seasons the entire salad, and its crumbly texture contrasts with the crunch of the vegetables!

Added olive oil and oregano to tie it all together. Went for smoothness and a richness from herbal notes that made the salad taste distinctly Mediterranean.
Got freshness from the vegetables, fat and protein from the feta and olive oil, and bold flavor without feeling weighed down. Found a can of tuna so threw that in the bowl as well!
