Since yesterday we had Monday off, so it was along weekend for us, why today feels like Monday still? 😅 Am I the only that feel like so, whenever it's Tuesday after a long weekend? 😅
It's breezy but sunny at the moment. Just like yesterday, but with clouds. Inside the greenhouse was 13 C only, and I saw a couple of leaves on my plum tree turning red. Early Fall? Idk. I don't wanna 😅
Let's just share a recipe for now!
2 Indonesian bay leaf (daun salam)
1 thumb ginger, peel and slice
2 kafir lime leaf
3 tbsp ghee
1 lemongrass, bruised and knotted
1/4 tsp each white pepper powder, sweet paprika powder, galangal powder, turmeric powder
1 sweet bell pepper
5 garlic
2 bird eye chili
1 medium-large onion
3 candlenut (kemiri, no subs)
3 tbsp water
2 kg chicken drumsticks/pieces
1 1/4 c water
Chicken bouillon powder to taste
Dark brown sugar to taste
2 tbsp sweet soy sauce (kecap manis)
In a food processor, turn onion, garlic, sweet bell pepper, chili, candlenut and water into a fine paste and pour mixture into a large pan
Add in lemongrass, ginger, kafir lime lef, bay leaf, ghee and spice powders, saute until fragant for 2 minutes
Stir in chicken, coat evenly, and cook for 2 minutes, then pour in water. Cook, covered, for 10 minutes
When 10 minutes is up, flavor with chicken bouillon powder and about 2 tbsp dark brown sugar, stir to combine. Continue cooking for another 10 minutes
Add in sweet soy sauce, stir, and cook until liquid is much lessen and chicken cooked through
Great with rice!
