Spinach Soup

Good Morning!

Rained again last night, but sunny morning at the moment, though. I saw a posting about some kind of earth movement or something to do with planetarium, that causing weather weirdness this year. I think the post was something to do with solar storm that messes the earth seasons. Have you guys heard about it? I believe it. Short Winter, cooler Summer, yet burning hot sun when the sun is out that I am super dark, like I've never been 🧐

Speaking of hot sun when it decides to show up, this following dish is cooling for a hot day 😍 Great at room temperature, served with warm rice, when the day is hot. For sure great served hot as well, but hot rice +hot soup, that's like for Winter time better 😁

Easy to make, simple ingredients, nutritious!

1/2 bag of baby carrots
1 bunch of spinach
1 shallot
2-3 garlic
2 L water (less or more is depending how much soup liquid you'd like to have)
Sugar, salt, MSG to taste

Slice or rip spinach leaves and soak in water

Slice carrots and rinse

Slice shallot and garlic thinly

Drop carrots into the pot and bring to boil. Once fully boiling, for 5 minutes (covered), drop in spinach, followed with sliced shallot and garlic

Season with sugar, salt, and msg if using. Soup should be a tad sweet in flavor, but balanced to the salt.

Serve with warm rice or as is!

I love spinach soup! Only ever had it hot though on top of hot rice even in summer here and definitely back home where the temperature doesn't change much XD

There's supposed to be a pole shift or something, I can't remember how it works as it's been a while since I looked it up (and i don't think I fully understood it when I looked it up either). But the gist was the seasons will shift every so often which is why I keep telling people that the seasons don't care about the calendar and we should just take it as it comes rather than complaining about how the month is not the expected season XD

Not easy when it comes to gardening. Thode hot and cool planting guides are out of the window 🤣

They probably use months as that's easier for most people to think about but they may need to switch to using temperature ranges to be more effective XD
