Rhubarb Raspberry Tiramisu

Good Morning!

It's been wet here. So not fun, although beneficial for the garden and wildfires for sure. I'm just annoyed when I can't go to the backyard, don't mind me 🥴

My bird cam is finally attracting birds nowadays. After almost 3 weeks not it's up in the backyard, a Magpie visited it twice, and now a House Sparrow comes for close to 3 days in a row 😍 and yes, I think it's the same bird 🧐 It's so nice watching them stopping by the camera 😊 I had 4 bird houses last year, then we took down one and put a camera and yeah, it's been nice 😍

For today's recipe, another tiramisu inspired!

500 g frozen rhubarb slices
1/2 c frozen raspberry
1 c sugar
3 tbsp water

1 c heavy whipping cream
2-3 tbs icing sugar

1 block cream cheese
4-5 tbsp icing sugar

1 tbsp beef gelatin
4-5 tbsp water

2 sleeves lady's fingers
1 1/2 - 2 c whole milk

In a pot, mix rhubarb, raspberry, sugar and water. Cook on low medium heat for 10-15 minutes, covered with lid. Let cool to room temperature.

In a small bowl, stir in 4 tbsp water with gelatin, let it bloom

In a bowl, cream heaving cream with sugar. Stir in the last tbsp of water into gelatin, and pour gelatin into whipped cream to mix

In a clean bowl, cream icing sugar and cream cheese, then mix cream cheese with prepared whipped cream

Moisten lady's fingers in milk, lay them on mold. Spread rhubarb mixture on top, then spread cream. Repeat steps then chill tiramisu for at least 4 H if not overnight

Slice and enjoy 😍
