Fruitcake

Happy Tuesday!

I somehow pulled my right leg while scraping ice off the car window earlier. Now it feels funny and somewhat uneasy. Meh. When you're old 😅

I have this nice fruitcake recipe to share today. It's not as festive as Christmas fruitcake though as it is only using dried cranberries and golden raisins, but oh my, it's yummy, if I may say so myself. I just love all sorts of teabread or tea cakes 😊

1 1/2 c dried cranberries
1/2 c golden raisins
2 tsp allspice powder
Salt (generous pinch)
1/2 c dark brown sugar
1/2 c sugar
1/2 c water
1/2 c orange juice
1/2 c unsalted butter

2 eggs

1 1/2 c flour
1 tsp BSoda

Place dried fruits, sugars, salt, spices, water, juice, and butter in a pot, and bring to simmer for 5 minutes. Let cool to lukewarm or completely to room temperature, for 45-60 minutes

In a bowl, mix flour and baking soda, set a side

On a separate bowl, lightly beat the eggs

Once fruit mixture is no longer hot, stir in eggs, followed with flour mixture. Mix until just combined

Pour batter into parchment lined loaf pan and bake cake on preheated 325 F until knife inserted in center comes out clean (60-75 mins)

Let cake rest, before slicing. Flavor Will develop even more the next day and the cake is good for a whole week in the fridge.

Oof yeh getting old sucks ^_^; sounds like a keep it moving so it doesn't stiffen up but try nnot to do too much heavy/weight bearing stuff with it til a few days after it feels better. And enjoy your fruit cake XD
