We have been having frosty windows now and then. My husband installed the heater for the greenhouse sometime last week, and golden leaves are not just visible big time, but also flying here and there, already. Yep. Time to think of Halloween then! 😁
What will you be dressing up as this year? My youngest wants to be a character from Star Wars, but he doesn't exactly know as what yet. He also has made Christmas list (which happens to be his birthday as well). Yep. Halloween and Christmas are still a way to go, but he has hopes and dreams for those already 🤣
But for now. Let's check this following recipe, shall we. Lazy mom (me, I mean) chicken Biryani 😊
2 large onion
1 c peanut oil
1.6 kg chicken thighs, boneless, skinless
1 c plain yogurt
2 c water
1 box Biryani instant seasoning
2 tomatoes
2 c raw rice, rinsed
Fresh mint
Fresh cilantro
Dice onion, cube tomatoes, chop mint and cilantro, all separately
Saute diced onion in peanut oil til fragrant, then stir in chicken thighs, cook until whitish, then add in instant seasoning, cook for a minute or two
Add in yogurt and water, lower heat, and cover. Continue cooking until meat is cooked through and liquid is oily
Take off lid, stir in tomatoes, then add in rinsed rice. Cover again, continue cooking until rice is cooked, liquid absorbed, stirring occasionally, then stir in chopped mint and cilantro
