Sunny morning here but super chilly, that we left home in pants instead shorts or skirt, to school. Later in the day, supposedly it will be only 12 C. Meh. The good news, no school tomorrow. Yay!
My son is going to ExploreFest today. This is where elementary students prepared wooden race cars, and then they will...race them 😁 He is so excited about it 😁
Anyhoo! I have a nice simple dinner recipe today.
5 large potatoes
500 g lean ground beef
1/3 c coriander leaf
2 garlic
1/2 small/medium onion
Mushroom granules to taste
Chicken bouillon powder to taste
White pepper powder to taste
Sesame oil a couple drops
1-2 cans mixed veggies, drain
Sriracha Mayonnaise
Grated cheese
Steam potatoes, if yours red, no need to peel them, if you like
Slice thinly garlic and onion
Slice or chop coriander leaf
Brown ground beef then stir in sliced onion and garlic, cook for 1-2 minutes, then stir in coriander leaf. Season.
Let beef cool to room temperature
Grease 9 inch Pyrex with unsalted butter
Mash potatoes right on the Pyrex, drizzle with Sriracha Mayo, spread some beef, top with mixed veggies, top again with the leftover beef, then sprinkle grated cheese super generously
Wrap with aluminum foil, bake on preheated 350 F for at least 25 minutes
