Hope this finds you well. Yesterday I was so annoyed with the health system here, up north BC. We don't have walk in clinics at all, same day access often not available, and to wait to be seen by your doctor the sooner is 1 month wait, while the norm would be 2-3 months. It's ridiculous. Many don't have family doctor, so they can only call nurse online, or go to ER. The ones that do, as well, due to no walk in clinics and silly system. Anyhoo. I made an appointment 2 months ago to be seen yesterday. Right there at the reception desk, nope, it was canceled supposedly. The young receptionist didn't even know what to do, so she had to call another person and that person found a note on their screen that supposedly said "need to rebook". After back and forth conversation, the young said sorry, but that they have called me. Not once in the conversation that was happening in front of me, ever mentioned that they called, just that there was a note to rebook. I told them, why would I showed up here, if they had called me. No call, no message left, and they had called me??? I went up and down my phone to see, nope. Not a single call in was from the clinic. And certainly no message in my inbox. Then she said, sorry, nothing I can do. Then I said, if you truly had called me, why there was a note still on the computer that said "need to rebook". Wouldn't it be deleted by now if you had called me, so other receptionists wouldn't make 2nd, 3rd, 4th and so on for rebooking me, if so??? Like wow 🤯 Then, to rebook, is end of October, and she was still looking, and possible to November. 5 months waiting then??? For a freaking inhaler prescription???? What am I to do when am dying from unable to breath but clogging ER, then? Majority always upset when ER is filled with so-cold flu patients, but what can one do when their family doctors aren't available 😵💫

1/2 large onion
3 garlic
3 candlenut
1/4 c water
300-500 g lean ground beef
1/8-1/4 tsp cayenne powder
1/8-1/4 tsp turmeric powder
1 tsp ground coriander
2 tbsp peanut oil
1 eggplant
1 bag kale
A handful baby carrots
1 can coconut milk
2- 4 c water
2 Indonesian bayleaf (daun salam)
1 box mushroom buttons
1 box firm tofu
1 can green Jackfruit
1 c red kidney beans, cooked
1 can quail eggs
2 bird eye chilies
Chicken bouillon powder to taste
MSG, if using
Rinse quail eggs, green jackfruit, and red kidney beans, set to side
Slice tofu and set to side
Clean mushroom buttons, peel the skins, and slice, set to side
Remove kale stems, soak leaves in water
Meanwhile, in a food processor, combine garlic, onion, candlenut, water, then pour mixture onto a pan, add in cayenne powder, ground coriander, turmeric powder, peanut oil, saute til fragrant
Brown beef until no longer pink, then stir in sautéed paste, pour in 1 c water, add in Indonesian bay leaf, followed with eggplant, carrots, and kale, bring to boil
Pour in more water and coconut milk. Add in the rest of the ingredients and season
Continue cooking until eggplant, carrots and kale are tender
