A Simple Bowl of Dry La Mian at Kallang

in #food2 days ago

Some dinners are just easy wins, and tonight’s Dry La Mian is spot on. I went over to the hawker centre near Kallang MRT, 5 minutes from the station, tops, and found exactly what I was craving, something simple, comforting, and wallet-friendly too. Priced at just SGD 4.50, this bowl felt like an instant “add to favorites.” Honestly, with the amount of care and toppings in it, I wouldn’t complain if it were above five bucks.

I got myself a La Mian noodles, the kind that bounce when you lift them with chopsticks. They’re thin yet springy and they hold sauce really well. A quick toss and the seasoning clung to every strand, giving each bite a rounded savory taste without tipping into salty.

Then the toppings, wow. For something that looks modest, the bowl was loaded, blanched greens for freshness and crunch, two bouncy meatballs, tender pork slices, bits of minced pork, a sprinkle of dried ikan bilis for crunch and seafood flavor, plus fried shallots and tiny garlic bits. It’s a lot of texture in one bowl, chewy, crisp, soft, and crackly, so your mouth never gets bored.

I found myself doing little “combos” with each bite. Noodles plus minced pork for depth. Noodles plus a shard of ikan bilis when I wanted a salty pop. Noodles wrapped around a leaf of chye sim to reset the palate. The meatballs were pleasantly firm outside, tender within, they taste of actual meat, not just filler. The pork slices were thin and silky, almost shabu-shabu style, easy to eat and well seasoned.

And then there’s the bonus soup on the side. You know how some complimentary soups feel like a formality? Not here. This one tasted clean and savory with a rounded stocky flavor, the kind that makes you pause and appreciate that someone simmered bones, not just water and salt. I kept alternating, slurp of soup, chopstick twirl of noodles, and it turned into a very calm, very satisfying rhythm.

Value-wise, this is where the stall shines. With the amount of protein, the crunch from the greens, and all the garnishes, I honestly don’t know how they keep the price this low. Maybe magic, maybe hawker economics, maybe just a chef who really wants you to eat well without thinking twice. Either way, thank you, chef.

Ambience-wise, the hawker centre was its usual lively self, fans spinning overhead, a soft chorus of clattering spoons and gentle chatter, and those glossy tabletops that photograph way fancier than the price tag. It’s the kind of casual setting that makes food taste even better because you’re relaxed and focused on the good stuff in the bowl.

Overall takeaway, this is the kind of everyday dish that reminds me why I love Singapore’s hawker food, no fuss, generous portions, and a flavor profile that just makes sense. If you like your noodles springy, your toppings plentiful, and your budget intact, this Dry La Mian is a small victory at dinner time. I left happy, full, and already planning a repeat visit. Next round I might add a soft-boiled egg or try a spicy tweak, but honestly, the base version doesn’t need anything. It was an enjoyable night, and I’ll be back soon.
